You start to level in your starting zone. Then you just pick up quests, every quest opens up new ones. They also take you to new zones usually.
Regarding professions: pick what you want, but I would personally opt for either 2 gathering professions or 1 gathering profession and a crafting profession. 2 gathering professions = more gold, but it eats away at your bag space :p
gathering profession = herbalism, skinning and mining
crafting profession = jewelcrafting, blacksmithing, engineering, leatherworking, tailoring, enchanting, inscription, alchemy
