Since no one else has mentioned it, Leatherworking gives you access to
Draconic Embossment - Intellect, which hands down is the best enchant you can get right now for legs (or overall if I recall correctly). However, leveling the skill specifically so you can get that enchant may very well not be worth the cost for you (certainly isn't for me). After leatherworking, many people consider jewelcrafting to be the best, though it's really not much better than enchanting, blacksmith, or engineering.
This is all taken off the top of my head from what I remember reading over at elitist jerks, but it's been a few days since I've been over there and I'm assuming the numbers given for these professions hasn't changed.

I just don't like the fact that you can't use the alchemist flask on top of another flask or elixir.
Mixology is there for that purpose, but it's the only profession that requires consumables to maintain the stat bonus for having a high level profession. Otherwise, I would roll Alchemy for my second paladin for the stat increase. It's much cheaper to level than BS or JC.
Don't you have that reusable 80 of a useful stat flask? My Alch girlfriend has something like that on her bars, but I'm not entirely sure what it is. I think it's meant to give you your bonus when you aren't flasked.

The thing about LW is that there are only haste and crit to bracers enchants for non LWs. So it's not 80 extra intellect like every other profession, it's -50 haste +130 intellect, making it awesome. However, they're adding +50 str/int/etc. bracers enchants that will be usable by anyone, I think in .6.
