Here are some things to think about...
1. do you have a herbalist?
2.
http://elitistjerks.com/f75/t106009-cataclysm_mage_resources/#post1766749
Enchanting
2x Enchant Ring - Intellect for +80 Int.
Inscription
Felfire Inscription
adds 80 Int over
Greater Inscription of Charged Lodestone
, which also saves you some reputation farming.
from a min/max they are the same.
3. You will need a lot of gold to buy herbs to level a scribe or you will need a farming toon to pick the herbs.
4. leveling enchanting is done alot of ways and is easier than inscription to level imo.
* farm low level instances and de the gear then enchant on scrolls and sell them in the AH. or sell the mats on the AH.
Gold making
1. glyphs are a one time sale now.
2. people will get upgrades and buy the same enchant time and time again.
3. darkmoon decks are normally only good for the first tier of content in a expansion. "when" they sell they will net more gold at one time but you will sell more enchants then decks and net more gold.
This is all my opinion and is all subject to server economy etc.
Please feel free to discuss and agree/disagree constructively without flaming.

I would say Enchanting is more profitable because people always need to repeatedly enchant their gear as they get upgrades. Since the number of people with the very best gear << number of people whose gear can be improved, that means an Enchanter will never be lacking customers.
Glyphs are hit-and-miss propositions; at most, I can sell one for 80g in my server (Venture Co.), and some glyphs are next-to-worthless (in gold terms, not functionality). It's not a drain on your budget (as long as you have a cheap supply of herbs), but it's not a big money-maker, either.
As a sidenote, when I was starting with Inscription, I made some
Enchanting Vellum
to level up. Not knowing what to do with it though, I ended up auctioning it off - and imagine my surprise when my stack of 20 velli sells for 40g or so, a king's ransom for a fresh character in the level 30-40 bracket. It took a while for me to realize that you can actually buy those things off a vendor (so I no longer sells it due to ethical considerations).

Both are equal as hard to level.
Enchanting has mats that bring the issue. Enchanting is easy to level until you hit the Outlands levels then you go threw alot of dust and essences. Wrath leveling was somewhat easy then I hit Cat. Cat enchanting leveling has been a pain do to the number of Essences that it needs and they not being all that easy to comeby.
Scribs use alot of herbs. Sure its easier to level compared to want it use to be. But you still go threw a fair amount of herbs. There are a few hard places that depend on Rng for those skill-ups.
Remember this 1 Stack of herbs is Worth 3 inks
. It would be costly on my server to level do to the Outlands herbs going for 65g+ a stack. (Course the Gylphs sell for 100g+ also, poor dk's)
So really speaking both can be costly to level. And it depends on the server that you play on. Also people who say that Scribs are going to die for making a profit have no clue want there talking about.
Making money with any profession is easy if you know the market. I.E. want gylphs do toons use for there spec's? Which Relic's sell good? Is this Off-hand really worth it to craft. If I scroll this enchants will they sell? Just a few things to ask yourself.

1 stack of Herbs actually gives 4 Inks a minimum, 5 on average. Leveling Inscription is a joke, pretty much you ride on +3 skill point glyphs all the way, the hard part is getting recipes which comes either from daily research or (rare and pricey) Books of Glyph Mastery. Inks from BC can be get from milling Cata herbs and trading them (you can ask someone in guild if you can't mill them yet).
Also, enchanting isn't profittable at all at lower leveles, and right now getting any profit off it is extremly hard, you can get most of scrolls of AH under mats price. This will change later of course, but atm you are looking at a loss.
As for Scribes not earning money, yeah. Thats why I earn only ~4k gold
profit
each day just by selling Glyphs on AH (undercutting is the key).

Yeah, I picked up inscription on my DK last week, I'm at 400 skill now and I've actually made profit leveling - straight eating the costs of overpriced mats to level faster (instead of only buying the cheap ones), eating the cost of worthless glyphs I've had to make through dry spots where the only glyphs have no real AH value.

Various things can influence your decision on this....
1) is this toon or another that you play often and herbalist? if so chalk one up for inscription
2) do you like running dungeons over and over for stuff you are just gonna d/e? (or what i do have a main that just rolls greed in randoms and sends the greens to said enchanter for disenchantimifaction) if you think this is desirable then chalk one up for enchanting
(note: you lose more money than you think on using quest greens and dungeon greens for leveling enchanting especially as you get higher. Greens for cataclysm can sell anywhere from 5-30g to a vendor which will often land you with maybe 1-2 dust for hyjal vashjir and deepholm quests, more dust/greater essences for uldum and twilight highlands.
Realize either way you will spend a bunch of money leveling these professions. Inscription can make some gold if you find a glyph that is for some reason, selling ridiculously high or whatnot. But enchanting you can also make gold off of tips or simply selling scrolls on the ah. Personally I have a maxxed enchanter but only a low inscriptionist so I'm probably not the best to ask. But, both are useful but both will have their costs

You can level from 480 to 500 on Origamis, it's very cheap method. After that, best deal is to make Forged Documents. Each skill up cost 3 Inks - gold you find in bag (around 20g). In fact, I wouldn't wait with leveling since it's daily craft. Then at 515 just craft 2 Relics.

Tailoring and Enchanting go well together, because you can dis-enchant the tailored items to get mats for your Enchanting.
Cheers.

I agree. These 2 professions go very well for just that reason. What I did is farmed 60
Linen Cloth
then i made 30
Bolt of Linen Cloth
. then i trained for
Brown Linen Pants
and made 15 of those which DE'd into
Strange Dust
. real simple :)
