You already have Alch and JC, the only other profession that you're missing in what you're looking for is Enchanting which you're already working on with this toon.
Blacksmithing will give you access to buckles. Tailoring or Leatherworking give access to leg enchants. Inscription covers your glyphs as well as your shoulder enchants, allowing you to ignore a gear grind.
That's really about all there is to it.
Engineering isn't as useful as it used to be and it doesn't provide you with anything that you just stated you're looking for. A second alchemist doesn't grant you much benefit either, save choosing a second spec so one makes your flasks and the other your potions.
Of the options available I suggest you pick either Tailoring, LW, or Inscription as they offer you the most direct benefit in the areas you pointed out.

definitely alchemy then. they have a re-usable flask.
you can drink 200-300g per hour in flasks raiding, but you only pay for gems/enchants when you get a drop.

Having multiple alchemists, tailors, and Jewelcrafters aren't bad because a lot of their potential is limited by cooldowns.
I have 3 alchemists. I was going to do 1 of each specialty until I found out the hard way that potion spec is fail, so I have an elixir spec and 2 transmute specs. They're my money makers.
2 JC's is great because I can have 1 that uses their tokens on buying cuts and 1 that uses their tokens buying Chimera's Eyes (and I did this with dragon's eyes in LK).
I'd pick Alchemy personally.
