I have been searching high and low for the hit, crit and haste caps but can't find them, i am probably looking in the wrong place, can anyone please tell me what they are?
Ok first off Hit then Haste don't worry about crit.
Hit has always been 8% or 10-- rating
Then haste. However don't stack haste gems use Strenght.
Strenght>Hit>Haste
Hit needs to be soft capped as our Ghoul gets Hit and Exp. from our hit.

crit and haste caps but can't find them,You aren't going to hit either of them, get as much haste as possible and stay away from crit if you can get other stats.

Hit soft cap for yellow hits is 8%, for white hits, it is 27%. There is no real haste cap, and crit cap is (I guess) 100%, good luck hitting that though.

White Hits for may understanding is for DWing only. (Fury Warriors and other class/specs)

There needs to be some clarification made. 8% (961 Hit Rating) is the cap for 2H special AND white attacks. 8% is the cap for DW special and 27% is the cap for DW white.
The Haste cap is unreachable in current or, likely, T12 gear. Don't worry about it yet.
Crit cap is going to be 100% for specials, 76% for white. Don't bother going for it since crit is bugged ATM anyway. Crit is not something you should actively seek on gear.
Finally, to answer ALL of these questions, find the Unholy thread on the ElitistJerks.com Forums.

Actually, there is a point of haste that is more than reachable right now where mastery becomes higher than haste, I'm not sure of this but I'm almost certian I've read it somewhere.
For this goes: sim it, as mastery depends on a lot of factors.
