I am very late with deciding which non profession to take, please help

I am currently a lvl 66 Rogue with two gather profession, mining at 217 and skinning at 306.
I am thinking about dropping one of these to pick up a non gather profession but I am not sure which one and/or if I even should. I need some help with suggestions please.
I am a Rogue, (again, lvl 66 already) so I thought maybe I should take up LW. But, since I am so high already, I could not wear anything I make until I reach my lvl. Then I thought I try engineering since I mostly pvp, but, still the same issue, a lot of just vendor items that I create. I do like the LW enchants you get from the profession, especially the +130 AP to bracer but would that be worth it? Engineer got some great stuff as well esp for pvp.
Can you make good money with LW selling the leg enchants and gear?
Should I just keep going with these two gather? I really would like to have a non gather profession but not sure which way to go. I do have some alts with some extra money I could spend on mats to help lvling this toons profession. Any suggestions? Thanks.

If this is your only (or at least highest) character, keep those gathering professions. And go back to Azeroth and get mining up to 300+, otherwise you're missing out on all the outland ore if you're 66 already. Get some cheap trash gloves
enchanted
to make that go a bit faster.
Sell everything you skin - you'll be needing the money (fast flying @70 will quickly pay for itself), also keep all the ore you mine, you'll need that for engineering later, which, as you've figured out, is a great pvp choice. There's nothing apart from the wrist enchant you can get from LW that you can't otherwise buy, and it doesn't make you great money when maxed anyway.
You should probably level to 85 first if you want to play PvP endgame and start on the engineering then. Whilst power levelling engineering with lots of gold is
incredibly
effective
and
basically
overpowered
(requirements are skill level, not your character, so you could technically use all those at lvl 65!) it'll be a rude awakening when your character level catches up with your gear, so don't do it!
For making the most money, and helping with stats, you probably want to be JC+engi long term, thought that will take a while. And lots more mining...
Don't automatically assume that it's the most profitable to be farming cata zones for mining either, depending on your server you can make lots of gold from BC ores at the moment, and there's much less competition.

If you need money then the duo gathering professions are going to be hard to beat for the amount of income they will make if used to there full extent.
Eng/Mining has alot of good things that are going for it. First you get an Epic Helm that is Bis for Pve if you do both. Second Its easier to get Volitile Airs. Which are a pain to farm and are needed for alot of things. The Spec Bonus are just a added bonus.
Also Gnome Eng. is more Pve, Goblin is more Pvp. (even if you do kill yourself in the process)
Any Profession can make money if used to there full potential. Some are a little easier while others change depending on how well you know the AH.

And if you aren't going to be raiding, just stick with gathering professions because you won't need to min/max. You'll make more gold and be happier overall.

Thanks guys for the suggestions. I still have not yet decided which way to go but the suggestions narrowed it down for me, at least. I will keep mining but then either take jc or engineer. It'll come down to if I wanna make money or wanna have the gadgets :)
