Unholy and Frost will probably be close to the same in PVP once 4.1 is released. As far as damage and CC is concerned. However from reading everything and looking at everything it looks like frost will be the new favorite spec since there will be more burst DPS off the starting line. The CCs are similar but again frost has better off the line CC as where UH has to build the pet up to get a good stunlock going.
As far as duel wielding or 2 handers go... well that all depends. 2hander have great stats and there are great 2hand only chants. On the other hand 1handers you can chant disarm on top of a flat %to stat/damage/healing chant. so its up to you. I think they are about even anymore. Just how you want to play.
Blood is a completely different animal. If you get stuck 1 on 1 with a blood DK as any class you will be crying or cursing. They dont have a lot of CC and there DPS isnt the greatest but they are retardedly hard to kill. And with the new Death Strike Glyph it made them even harder to kill because they went from PVPing in Blood Presense to frost or UH (Most likely UH for movement speed bonus and lower GCD). There is a change to Blood in 4.1 that makes it so that they dont get the damage shield unless in Blood presense. But its not hard to flip to blood then hit Runic empowerment if you start getting focused by melee.
I play blood myself. But you have to have a really good partner as blood because you wont be able to peel hardly at all.
Good Combos for Blood are:
Prot Pally
Another Blood Dk
Sub Rogue (Best Team up)
Enhance Shamen
Surv Hunter
Frost Mage
Lock... any kind

Blood never really was viable. After the self Death Coil nerf it dropped survivability down a lot. I still do great in 2s. Not so well in 3s but then again thats with doing 3s with 2 pallies that dont know how to HoP there team mates and only focus on "melting face".
I say pick a spec and stick to it. Frost has better Burst Damage (or will in 4.1) Unholy will probably come out on top with better over all dps in pvp. And CC will be similar between the two. Unholy you just have to pay attention to a pet as well as the normal stuff. But once you get used to it, its a great class. Like i said before blood is a different animal. Very limited in dps unless you time everything just right. And almost impossible to kill healers by yourself.
Oh and the healer didnt quit after 30 mins... arenas only last that long. And you won because you're a Blood DK... More Damage and Healing.
Also if you are getting focused on by melee like i said before the shield you get while in Blood Presence will be more valuable than the glyph for death strike. And also your runes will cool down faster allowing for more Death Strikes and you will be able to runic strike to allow rune refreshing allowing for more Death Strikes. You want to switch presence depending on what you are fighting... but if its just 1 on 1 you can get away with frost or UH presence.
Fighting melee Blood Presence is better... fighting anything else go unholy or frost and use Death Coil and diseases.
There is nothing fast about Blood... its all about staying in the game and tearing them down.

Just a little input from a long time Death Knight but a relative newcomer to arenas.
My buddy is a sub rogue and loves pvp and after a couple years of playing the game finally convinced me to hit the arena with him, and we've only tried 2v2 so far. I've also been doing more BGs to help boost my gear. Our goals were basically to get our weekly cap's worth of conquest poitns for better gear, and to get me a taste of Arenas.
My two specs are Blood pve and frost pvp. When we first started out in 2's, we lost the first 5-6 matches pretty fast. It was frustrating. We found that the other team would focus me and burn me down fast and then just leave themselves with a rogue to chase around. Anyways, I had the idea to try my blood spec in the arena, not really with the intention of winning, but just to give myself some more time. I kinda treat it like tanking in a way: do the damage I can, but really just try to stay alive. Anyways, we had immediate success and are close to a .500 ranking now after about 25 matches.
The above points made definitely hold true: Blood is terrible against healers (especially holy paladins). Actually holy paladins are hard for me to kill in any spec for some reason. My teammate and i have trouble against the frost mage/rogue combo that so many other teams have trouble with as well. But against double melee teams, we kick serious butt.
Blood is also nice in land-grab BGs (Arathi Basin) and Tol Barad. In Tol Barad especially, you just have to stay alive long enough for the flag to switch sides, and as a DK you'll find that you can last for a few mintues while your teammates have died, respawned, and rejoined the fight multiple times. That constant pressure can definitely help turn the tide.
Anyways, hope this tiny bit of circumstantial evidence helps!
