Here
is my DK, for reference.
What would be the best option? I stack Mastery, so I would have thought that the Stamina from Gargoyle would be a better option, but people are saying that Swordshattering is better at certain levels of play.
I mostly tank Heroics, sometimes dipping into normal-mode raiding if my guild needs it. Which is better?
I don't have any maths or formula to offer.

the nice thing about SS is its 4% avoidance that is not effected by diminishing returns.
I was using SSG, then one day i wanted to know what i'd lose to gain 4% avoidance. So i went and runeforged my weapon back n forth, and back n forth about a half dozen times.
I lose like 2k health, and around 1% damage mitigation from armor.... and i gain 4% avoidance.
2k health when your probably have over 150k health already.. It's like a drop in the bucket. It's almost not even worth mentioning.
So then it ends up being 1% physical damage mitigation vs 4% avoidance.
Now maybe if it was 2% damage mitigation from armor and like 5-10k health, I'd probably stick with SSG. But the way it is now. 4% avoidance is just too good.

* - Lichborne isnt a pvp (only) skill as you may have thought skipping it. It makes you able to heal yourself with death coil due to undead transformation. Each heal is about 30k. You should be able to pop about 6, maybe less. 2 min cd, 180k healing - not too shabby. A bit more with Vampiric blood active.
#showtooltip
/use lichborne
/use death coil
Should be spammable.
180k? Where are you getting 240 Runic Power to spam 30k heals 6 times!
You do know the glyph no longer refunds 20 Runic Power to heal if you heal yourself with it right?
I'd say you'd get max 90k in heals if you save all your runic power. And even then you'd have to be glyphed for DC in a Major Glyph slot to get 30k out of it. I'd say it averages to about 23k or less per DC.
That being said though, I have the talent too because there really is nothing better.

I dont. I got Morbidity.
But I am different. In Wotlk I tanked in Unholy. I was devastated with the cata change, forcing me to spec blood, but i adapted.
Unholy is about as viable for tanking now as it was after Naxxaramas. Morbidity is useful for Halfus and that's it, out of all the fights. Maybe if you could pick it up along with Lichborne, but alas it does nothing else for pretty much all raid encounters.

Cant be arsed. You are free to search along the topics for my reasons.
Cant be arsed explaining, yet you did explain? You
still
missed the point entirely. For the second time.

I tend to tank with Fallen Crusader simply for the occasional proc heal and increased threat I don't tank anything higher than regular 5-mans though, so i wouldn't know how much of an issue 4% extra avoidance would cause. I have a feeling that it mostly falls to preferred playstyle, like most of the variations in this game.
No, no, no, no, no.
I mean, sure you could argue that it's just five-man normals, but at the same time you might as well gem strength use every Death Rune of Heart Strike and try to maximize damage taken for vengeance and just DPS.

Heh, I've tanked Blood since I created my DK towards the end of WotLK. (still pre 4.0). ;)
I miss having HB as a frost tank still to this day. /cry
