Which is the better mana regen trinket out of
Darkmoon Card: Tsunami
and
Jar of Ancient Remedies
?
It seems to me that Jar might be better for just pure regen, while Tsunami is better overall. Is this right?

Jar is by far more regen than any other trinkets currently available. (And for note, you need to be triggering the on-use every time it comes off cooldown to get the full effect.) The downside is that regen is the only thing it gives you.
Tsunami is less regen, but it has passive intellect. Unlike other passive int trinkets which are either procs or on-use, the spirit buff should pretty much be up 100% of the time while you're in combat. I'm a big fan, personally.
If you're really hurting for mana Jar is a good choice, but (in my opinion) Tsunami is just a better trinket if you're not.

Jar gives more mana regen, but that's all it gives. Tsunami gives more mana and more SP (more throughput)

My priest also has the alchemy trinket, but I'm thinking that I'd get more benifit from using these two that using one of them and the alchemy trinket, just on the Chimiron fight. Would you agree?

Someone did the math out, and the longer the fight goes, the less strength you get out of the Stone trinket. You only get 1 potion per fight, but that Spirit is going to keep on kicking.
That and dependant on your raid group, Tsunami can be more due to Replenishment. And Hymn of Hope/Shadowfiend.

Tried out the combo of Tsunami and Jar in a 5man just before... 100% up time on the spirit buffs and I never went under 80% mana, even when I had to pump out a few Flash Heals in a row on the squishy tank. With Kings, Might and Replenishment up I had roughly 4.6k mp5 in combat, which is quite pleasing. I think as a combo the two trinkets should work great for when I need them.

100% up time on the spirit buff

Just to reiterate what I mentioned in my previous post, if you are not triggering the on-use mana restore on the Jar every time the cooldown is up, you're doing it wrong. Triggering it every cooldown is worth more mp5 than just leaving the buff up all the time.
Another thing about the on-use, it doesn't restore the mana to you by default, it gives it to your target. The easiest way to deal with this is to make a macro.
This is a very basic macro that you could use to trigger it manually:
#showtooltip Jar of Ancient Remedies
/cast Jar of Ancient Remedies
If you want to get a little fancier, this is what I use for my trinkets:
#showtooltip Heal
/console Sound_EnableSFX 0
/cast Jar of Ancient Remedies
/cast Shard of Woe
/console Sound_EnableSFX 1
/script UIErrorsFrame:Clear()
/cast Heal
That one makes it so that no errors will pop up with if the trinkets are on cooldown and can't be used, and the error sound effect will not play. Only the Jar needs the part, because of the targeting thing I mentioned. Any other on-use trinket would be done the same as the trinket in the following line, just pop in the name of the trinket in question. The spell that you're tying them to can be changed by entering its name in the first and last lines.

Nice macro, but I don't target people. I just use mouseover macros for pretty much everything. I'll probaly use it anyway. Just to err on the safe side.
Also in reference to your comment on my previous post, it was only a normal mode dungeon, and I didn't really feel I *needed* to hit the on use effect, since I never went under 80% mana anyway. Had I hit 50% mana I would have hit my macro that pops that and Arcane Torrent. The whole idea for me was to test just how much mana regen I was going to be getting in some actual combat.
