Barely. Remember that all of your 'DPS' gear is presumably going to have mastery to make this work, and in a tank spec all that mastery stops being a DPS stat.

Well, and ultimately, Mastery (and Dodge/Parry) are about physical attacks. Our options against magical attacks are more limited. If you tank in DPS gear, then that DPS mastery will go towards your Block. You might have more DPS as a "tank", and thus more threat-generation, but you also would have less HP, less Dodge and less Parry.
Very small percentage points of these things make a HUGE difference over the course of a long fight. Especially when you're the tank -- the one that all of the mobs are supposed to be beating on.
Think of it like this: if Christopher Columbus' course to the New World could be drawn as a straight line (even though it wasn't), and if he had left port just a few degrees to the left or right...? Then, by the time he'd crossed the Atlantic, he would be landing on a shore much farther North or South of where he did.
In your case, you're most likely to end up with a pissed-off Healer and DPS who are only too willing to kick you.
Now, I don't begrudge a tank the odd (and I say "odd", as in singular... rare... occasionally chosen with a method to the madness) piece of DPS gear. But tanks who show up in all-DPS gear, or some motley combination of DPS and PvP gear...? It doesn't take long for them to get booted. I wish I had an addon which would automatically warn me about such things
before
my repair bill had to suffer.
