What can I tank in this gear?

Well, with gear like that it'd depend on how geared your healers are, if they are uber than probably.
With that gear score can you even get into Troll Dungeons?
I'd try to get some epics from Trolls/Blacksmithing/Valor before you go into raids.

No he cant. I made it my personal agenda not to step into a raid until all my gear was 346 or above, but thats just me, possibly. I simply aimed as high as i could before i went into something that might prove too hard, and thats not fun gaming too me. (as in going into BWD at 340 and basically get one-shotted, don't know if that would happen, but lets take Halfus for example, he hits like a truck on steroids, his adds too (and depending on the weekly mix of adds, they can cause some serious issues), and Magmaw can cause some serious damage too if he feels like it, and after that it doesn't get any better)
Get 346, get exalted with your factions, get the rep-gear, pug a BH10, its not hard, gather as much VP as you can, and get the ring and relic. With that setup you'll be fine to go Troll-dungeons, they're not that hard either, but takes some learning. When you've got (
all/most of
) the gear from ZA/ZG you need you'll be in a very good spot to start raiding.
Well at least as good as you can get, but if you're in a guild that can support bringing a lesser geared tank, that might work for you, that's something that we don't know.
you're missing 3 glyphs, and 3 enchants. Get the glyphs you want, its only minor's missing, so nothing game-breaking. The un-enchanted (bracer back and legs) are all 346+ so it might be worth it to get that done. Having un-enchanted items looks a bit sloppy, and even if you go the cheap path its better than nothing.
Otherwise, looks pretty good, keep doing HC's and gear up, rep up, it'll come, just takes some work.

What? There was no ZA/ZG a couple of months ago and people still raided.
He aint going for heroic modes.
When Cata was brand new, the hardcore heroic mode raid fanatics probably aimed to gear up as much as possible, as fast as possible, to be able to perform as good as possible. I know people that within a week of cataclysm launch had passed 346 iLvl, because they wanted to be the best as fast as they could.
Aint nothing wrong in being the best you can be, is there?
You wanna raid with subpar gear, fine, but if you want my advice, gear up

While what you say is true, you also have to think about what kind of gear they did first tier heroic raids in... blues plus a few epics on some members. All of the hardcore raids were doing heroics in almost all blues the second week of Cata. You can bet they didn't have full 346 either, because RNG is R. If you can do heroics in 333/346 blues, you sure as hell can do normals in it.

of the bosses on normal except for maybe Cho'Gall and Nefarian are really at risk of killing your tank so long as your healers aren't sleeping. Halfus hits like a wimp on normal, and so do his (reduced number of) drakes.

Cataclysm was released on December 7, 2010. Go check wowprogress, the strange thing is that Paragon got their conclave on wind achievement, December 7, 2010.
Now I'm not saying its absolutely impossible to raid in less than 346-gear. These guys surely did, but then again, they're the best in the world, and they went for world first-achievements. They probably didn't have time to wait. And btw, i think that's 10-man. But still.

My guild isnt best of the world. I think we've done about 8/12 while still missing 346 in every slot.
Now i read that at first as you're in 333 gear, but i don't think that's what you meant =P
Tho doing 8/12 in 333-gear would be an achievement =D
My guild is at 9/12, and we're pretty much 346+, a few missing some pieces here and there, but generally we're pretty well geared. And still no "defender of a shattered world" for me. So having 346+ in all slots doesn't make it easy mode. But it sure makes it easier, that's all.
But if you have time to gear up, why not? If he's gonna do a raid, sure, go ahead, and BH10
is
easy. And very rewarding, should you win a piece. As for our raid getting spanked, we just recently got a very talented and well geared holy Paladin in our raid, so it's just a matter of time before our other healers get a few upgrades, that will make our progression speed up. Currently Im (personally) 5/6 BWD, 2/4 BoT, and 0/2 TotfW. We did get a few attempts at Nefarian tho, but he promptly proceeded to wipe his behind with us, then handed our a$$es to us in a nice little package with pink ribbons on.

That was in regards to doing ZA/ZG as tank. That he can not, because his iLvl isnt high enough.
But i also stated If you're in a guild that can support bringing a lesser geared tank, that might work for you, that's something that we don't know.
I checked with my druid, who has iLvl 329 if she could step into BWD, and she could, so there is no minimum iLvl-limit before you can raid, so that's not an issue.

The reason the ilevel minimum is not imposed on raids is that raid's are created by players, dungeons are created by the system. There is an ilevel required to get into raids, what it is depends on the raid leader. And honestly, I think the ilevel's are perfect, because whether or not you could get <vodka> to run them in 300 greens, it's there for the random ques.
If you want to get a group full off 333 blue guildies, you still can, you just won't be able to random dungeon in. You can still do it by walking.

my thing as i have said before for other things, you never know until you try, i started tanking raids with my guild when i had only done like 3 heroics (normal ones). with that i would say most of your gear is normal heroic, i would suggest maybe finding a few crafted gear, such as the BS chest and belt. a few more rep gear would be good too, such as the twilight highlands boots, ramkahen bracers, as well as tol borad trinkets, which are nice.
on another note talents look, good. however glyphs (personal preference i suppose) i dont like, specifically vamp blood, i like the bonus hp as it alone can save u another hit before healers can use that healing bonus.
other than that you look good.
seriously just try it out, if you can tank heroics well enough to get all that gear you should be fine.

Vamp Blood + LB healing is godly. With it Death Coil will heal for 18k+ (with Vengeance stacked). I like to heal my self 2 times then DS / HS a bit for more RP to spam it again after the next incoming hit.
I like all my other glyphs, even BB. which fixes our like of good AOE snap threat when you grab crimson surge. It makes me fill like i am a frost DK tank again. I miss frost tanking but is was a little face roll with AOE threat.

Even without LB its good self healing. Vamp Blood + Life Tap + Death Strike give you a good amount of extra self healing.
I don't really see the point in the BB glyph. Maybe if it added a threat multipler, or more damage. But just increased range could get you in trouble. The default range is good enough. I do like taking crimson surge though.
