I rarely try to deal much damage with my resto druid- but when I do here are the things I do:
I put thorns on the tank just as he pulls. Counts toward their damage but I take pleasure in seeing the % damage show up in their damage log.
I put faerie fire on a boss if the tank is not already a druid and I have extra mana.
I spam moonfire when a boss is below 5% or nearly dead to speed the process only if I still have mana and no one needs heals.
I have tried to throw damage spells into my rotation when I run with good groups where healing and mana are not issues but when I see the dps/total damage I think it is best to just stick to healing as the real dps'ers can do more damage in one second than I can do in 10 or more.
I've started to treat resto "fighting" like I do resto pvp: throw on roots, kite adds to the tank let them get stuck and profit, as long as I am still alive I am "winning" the fight especially against a high damage dealing foe. The hope is, of course, that while I'm busy healing myself (resto tanking) someone else is actually getting it together to help.
When agro is all over the place to the best thing you can do is bring it to the tank and let them collect the mobs. Fighting is useless unless the target is nearly dead and you are not.
Oh the pleasure I get when I whack a mob for 2k damage with my staff.

basically
thorns on tank during group pulls
stacks of faerie fire on boss, especially when lots str/agi dps
moonfire + insect swarm for haste boost from
in BG, sometimes i use tornados on enemy healers if our rangers are not taking them out

I'll only cast a spell if its a mass of non elites, or elites that don't do much damage that get aoe'd down.
Like the trolls that are spawned right before last boss in ZA.
Or the trolls that come with the pack of 2 casters in ZG.
Or the trolls that are spawned with the second to last boss (the one with cauldrons) in ZG.
I used my last major glyph to make my hurricane slow mobs, so i feel its somewhat helpful even if the damage is crap.

Sounds like you have issues with Trolls. I suggest you use Moderator Pest Control.

In dungeons, thorns on tank is it unless things are going ridiculously easy.
In raids, maybe thorns on tank, an is and moonfire here and there if things are easy but that is rare.
In bgs, quite a bit. While the dmg is crud i find it hilarious to run in circles with thorns on and an is and moonfire ticking on a melee trying ineffectually to kill me :D It's all fun and games til backup arrives..I'm sure many a keyboard has been broken due to me doing this (I know I'd be munching nails if I were on the other end!)

I mostly try to outdps lousy dd's(5 mans) just because I can:P Or if the fight is designed for healers to do dmg(Chim / Alysrazor P3). Besides that I try to add a little dmg when I can spare some mana because I think it's always better than doing nothing and helps the raid.
