Armor Creating Professions

How do you all feel about armor creating professions such as Tailoring, Blacksmithing, and Leatherworking? In my experience, any quest or dungeon gear I have received is much better than anything I could create. I am a somewhat experienced player, but I would still call myself a beginner. The maximum level I have had a character reach is 65, and the maximum professional level I have reached is about 250-350. Do I keep running into this problem because I am not being patient and waiting until I max out my skill or obtain rare recipes? Or is this just a normal thing that everyone goes through?

Also most crating materials do sell well. Instead of farming yourself silly you could sell the materials and buy glyphs while leveling.

They're not useless but you do have to go out of your way to make sure you get upgrades for your level. But wow is easy enough that you get through it well enough with quest loot and dungeon/random drops. Then again it is a bit more fun (to me at least) to make sure I get to play around with my profs when I have the chance.
