Stam vs Avoidance & mastery (tank/blood)

The general consensus is to stack mastery, followed by avoidance (while keeping dodge/parry balanced). Stamina is mostly ignored except for matching sockets when the boni are worth it (20 mastery rating or more of any other stat).
You should be able to get enough hp by gearing and choosing blood as a spec, not by stacking stamina. Stamina-stacking died with dw-tanking: At the end of WotLK.

I thought it was Stam+Mastery or Avoidance. Because of how well Stam and Mastery work together.

You should have enough health to survive 3 consecutive hits from a boss in a worst case scenario(no healing from healers, minimal DS healing, no BS or other cd's etc. But you can easily get that without gemming stam, so just gem mastery in yellow, mastery/stam in blue and mastery/parry in red.
