Tank Marking help

I just switched my Paladin spec from Ret to Prot so I can tank if my raid group needs someone in a pinch. To practice and become competent I'm starting to run 5 mans (regular first, heroic later and finally ZA/ZG).
What I've found in running a few regulars is that I'm having problems keeping threat with multiple mobs. I think the core of the problem is that I'm not marking the first and second burn targets. With bosses, no problems. I'm keeping threat just fine, even when someone pulls 17k+ dps.
So, my question:
1)What add-ons/Are there any add-ons that the tanks out there use for marking targets?
2)Where can I find information as to which mobs are healers/casters and should either be dps'd down asap or cc'd? (i.e. which mobs to mark, lol)
Thanks for any help in advance.

I have my Num Pad keybound to all of the marks. So I can pick a target, hit NumPad 1, and it throws a Skull on it. Pick something else, NumPad 2 for an X. Then the other marks for Moon Sheep, Square Trap, Diamond Banish, etc etc etc.

Thanks for all the help. I didn't realize you could keybind raid markers; I think that's what I'll do.
Also thanks for the link as to who can CC what mob type, I had a general idea before but it's reassuring to know exact spells. I'm going to guess that there is no easy way out of determining a good kill order and that good old fashion dungeon homework/some common sense is going to have to do the trick.
