Probably better set in the Professions forum. And the answer varies from server to server. But from what I've heard, JC, Alchemy, Inscription, Enchanting are up there.

It's really going to depend SO much on your server, and the amount of time you are willing to put into it.
You can get rich using tailoring and enchanting, bags are solid sellers, and every time raiders get new gear, they enchant it ASAP. Enchanters with the "best-in-slot" enchants can make quite a bit of gold. And don't write off outdated enchanting formulas either, the "classic" enchants with no level requirement are popular for heirloom gear. Some enchanters don't bother with collecting them, or getting the materials for them, so the profit margin can often be very nice for the enchanter who takes the time to learn those.
Inscription is a solid money-making profession, and there are quite a few guides as to how to go about doing that. It generally requires the use of add-ons for maximum efficiency, but the same goes for most professions. The thing about glyphs is, now once you learn one, you have it permanently. So inscription is not *quite* as easy to make money as it used to be when you lost a glyph if you removed it. If there is already someone "running" the glyph market on your server, and determined to stay top glyph marketer, you may end up frustrated and not raking in as much gold as you had hoped. Unless you are more diligent/determined/obsessive than they are, and you can outlast them until they get tired and move on...
Jewelcrafting is another steady gold generating profession. Every raider who gets a gear upgrade will socket gems appropriate to their class/spec ASAP. Again, if your realm already has JC players determined to be in control of that market, you may find it more challenging to make gold.
Alchemy can be... interesting. Sometimes you can make good gold with it, other times flasks and potions will be selling for less than the cost of the materials used to craft them! You'd have to check your realm AH for how alchemy-crafted items are selling.
In general, Leatherworking, Blacksmithing, and Engineering CAN be used to make gold, but have fewer items with general usefulness. Blacksmithing's main item is the belt buckle. Leatherworking has armor patches. Engineering has a few vanity items, and some ranged weapons (which in general are about as good as quest rewards/dungeon drops, so they don't always sell well), but mostly creates items that can only be used by engineers. I'd say close to 80% of engineer crafted schematics have "requires engineering ___" to use.

Alchemy, Jewelcrafting, and Inscription are the biggest money makers. BUT, for all three, if you don't put the time in, you aren't going to make much. I'd say Inscription probably takes the most time to make money. Most of the time when I hear/read people gloating about how much they make with it, they also say they spend several hours a day just messing with the auctions. As for JC, I can buy a ton of ore, prospect it, and then sell everything and still have a considerable profit. My gems, except for red gems, almost never sell on my server. I am generally better off just selling the raw materials. So, as always, your servers economy is going to play a large role. As for Alchemy it seems to do much better in conjunction with JC than on it's own. The prices of Transmutes have gone down a lot on my server. It'll go back up again when they release Epic gems though, I'm sure.

For me persoanlly Ive combined 3 to make more gold than I ever have in my Wow career. Alch, Eng, Fishing.
Now it took a good while to get to the point im in now, but I currently am sitting on 20k+ and growing well over 5-10K a day. What i did was basically fish the crap out of twilight highlands, deepholm, and tol barad in order to get the highland guppies, lavascale catfish, and deepsea sagefish. right now the highland guppy sells for over 400G a stack on my server, catfish 200g and sagefish around 180. I use the profit from that to invest in the chopper and vial of the sands. I'm able to sell them for 18k and 48k respectivley. With an investment of about 10k into the chopper and 33-35k into the vial, i am netting huge profits. So combining the stockpile I have now, the initial fishing that I used to get the gold t o purchase mats, has turned into just extra G.

Jewelcrafting with alchemy is excellent as a constant goldspinner. I have alchemy on an alt, jc on main.
-Prospect a ton of ore
-Green gems can be:
a) kept for quests/prisms etc
b) transmuted into blue gems
-Blue gems (from transmutes and prospecting) can be cut and sold.
The reason JC is constantly so profitable (or has been in the past not so sure in cata) is not only does new gear require new gems, but a few details in patch notes can lead to a class or spec requiring a complete regemming.
This means:
-constant flow of gems selling as everyone gets new gear all the time
-massive profit when new patches/content arrive
The alchemy (transmutation master) helps make profitable use of green gems etc from prospecting and further feeds JC habit saving big time on JC costs.
I think this is good advice.. except for the green gems. Transmute red common gems into Rubys, but the rest of them should be used to make the ilvl 300 jewelry. You will ´proc´ blue quality jewelry about 10% of the time.. these sell for about 100-150g on most servers. The jewelry that is just boring green stuff, disenchant and sell essences, which sell for high amounts. Use the dusts to make bags. You will be amazed at how much gold you can make from those common gems if you use them the most profitable way possible.

I'm voting for Enchanting, based on that fact that while it's not a literal gathering profession, you can turn general crap into the mats you require to make enchantments. Almost any piece of gear can be "D.E.'d"into the stuff you need, save for maybe PvP gear and BoA stuff.
Everyone, and I mean everyone, needs enchants done, no matter their level. Twinking your alts? Enchants. Just hit 85? You'll need cheap stuff to last till your geared high enough for raids. Wanna PvP like a Baus? Do want enchants!
Hell, even the mats are going for a crazy amount... My pal from Fizzcrank told me that those special shards from the vendor (the ones you badly need to level enchanting itself) are going for like 10K, but the enchant themselves are like 2.5K~5K or so.
