I don't have a Pally myself, I do have a Shaman, and he was my first healer after a lot of DPS.

Lower levels? Healing Stream Totem and Earth Shield are pretty much all you need, so you can do a bit of ranged DPS as well. At endgame it starts out as a mana-drain but as you get better gear you won't have any problems (as long as the rest of the group have half a brain).
They do tend to say Shaman is a group healer, but single target is no problem at all either.

My offspec is elemental as well, I'm not that good at it but you burn through Firelands dailies in avg. 353 resto-gear so should have no problem there :)

I can't offer you stories on Paladins, I guess the biggest difference would be a Pala is melee when he isn't healing while a reste/ele Shammy is ranged.

Best thing to do is just to level each of them to 30 or so in their healing spec. Just know that their true healing abilities aren't really unlocked until later levels. Shamans don't get Riptide until level 69, which is one of their signature moves along with Chain Heal which they learn at a lower level. But they also get Earth Shield at level 10 which makes healing those low dungeons really easy.

I don't know much for Paladins as mine is only at 55 and is prot specced. I do know they are great tank healers, while shamans are great at tank healing as well as party healing with their Chain Heal and Healing Rain once at 85.

Both are fun classes and have their own perks.
