Random greens is it, pretty much. Go for "of protection" items.
For reference, mainly, I've done Hydross add duty in this gear, getting hit for very little and being told by all healers that I was easy to heal. (Note that I was being my usual perfectionist self: YMMV.)
Sunroc Mask of Nature Protection
(
+20 FrR
)
Pendant of Withering
Shadow Council Mantle of Frost Protection
(
+7 all resists
)
Archmage Robe of Nature Protection
(
+150 health
)
Slavehandler Pants of Frost Protection
(
+8 NR
)
Archmage Slippers of Frost Protection
(
+12 sta
)
Eldr'naan Bracelets of Frost Protection
(
+12 sta
)
Dragonhawk Gloves of Nature Protection
(
+8 sta
)
The Natural Ward
The Frozen Eye
Commander's Badge
and
Violet Badge
(for the extra stamina; my normal trinkets,
Moroes' Lucky Pocket Watch
and
Badge of Tenacity
, don't do much for a resist fight)
Boulderfist Cloak of Frost Protection
(
+15 NR
)
And my normal weapon, idol, and belt (because I couldn't track one down for the time it was needed, and afterwards I never bothered since I was fine as it was).

Yeah basically what Aeliel said. As you probably know you can't tank Hydross himself as a druid, but for adds duty you just need enough "of resistance" greens to get frost and nature res 100-150 ish and don't over gimp your other stats. If you have any trully exceptional normal tanking set items keep them on. Dodge (i.e. Moroes' Lucky Pocket Watch) IS usefull because the adds aren't casting spells on you, they are physically hitting you with nature or frost dmg, therefore you can dodge it. If healers are struggling use the few seconds before the tank brings Hydross over the line to pop a res pot.
Also - it's worth noting that the safest way to off-tank the adds is if they die really fast. Get your AoEers to give the OTs 5 or 6 secs to get good aggro on the adds, bring them all to be really close to the boss, then start nuking. Warlocks can do WAY more dmg than any other class here by chain casting Seed of Corruption on the boss. If the melee remain on boss at all times then the seeds detonate instantly and you get about 1000 DPS per add per warlock.

I do add-tanking and then subsequently banished-add-picking-up duty for Hydross with my two epic rings and of __ Protection greens. Buffed I'm somewhere between 150 and 180 for both NR and FR. It's definitely plenty. I actually take less damage from the elementals than I do from physical damage mobs at those resist levels, I think. It's not a hard goal to reach. I just hawked the AH for a week or so.
My guild banishes two, tanks two and MAs them down one at a time. Works out okay for us :).

The adds hit for elemental damage, and that doesn't get armor-mitigated. That doesn't make that cloak bad, but it does mean that chances are you'll get better results out of grabbing a random cloak of frost protection and enchanting it with NR.
Assuming the lvl70 cloak (lower level ones are less ideal, but work as well), you get 32sta, 21FrR, 15NR out of doing that, whereas you get 17FrR and 17NR out of Syrannis' Mystic Sheen (assuming you're using the +5 all resistances cloak enchant - I don't know anybody who'd burn 4 primal fire / water / air / earth on an extra +2 all resistances for the Major version of the enchant, but if you want to be a perfectionist...).
In other words, you get roughly the same amount of resistance out of the two sets of cloak + enchant (albeit slightly unevenly spread in the case of the green), but with the green cloak, you get stamina as well.
