Race doesn't really matter. One of you play a healer and one of you play a non-healer.

One of you being a healer is definitely a good idea. Also consider not rolling two cloth or two leather classes like a Druid/Rogue or Mage/Warlock. You'd be fighting over the same gear all the time and be wasting a lot of it.
I definitely don't recommend hunter/warlock, just from personal experience. I'd put a bunch of DoTs on a mob and the hunter would kill it before any of my DoTs really had time to do anything, so I was just wasting mana.

For classes, Paladin healer + Feral druid seem like an awesome idea - having healer, and a dps or tank, depending on the situation, would be great.
As for races...
Orc+troll or dwarf+gnome will give you the option to levle up together since the very beginning.
Undead/blood elf/orc/troll (any combination) or human+dwarf/gnome will garrant you co-playing either after 5-10 levels, or after a long journey undertaken by one of you.
Or, in the worst scenario, wait ~15 levels and go play together in the Barrens. Or Duskwood, but it doesn't have the quest capacity of the Barrens.

If either of you know what role in a party you would like to take its easy to figure out, but in case you have no idea what you want to do, here are the roles in simplistic terms:
Tank: highly armored guy who runs in and gets the enemies attention while you kill them
DPS: damage per second guys, focus on hitting harder faster better, w/o getting hit hopefully
Healer: Need i explain?
You can go into much greater detail, and othrr peopel have, go to the forums for each class and read a sticky or two up top to find out about each class for yourself before deciding.
My suggestion? Druid and Pally. 2 classes that could fill any of those 3 roles, just in case you want to change, you can easily.

If you both plan on end game then I recommend
If Human:
Priest or Pali for healer - Warrior or pali for tank

Druid or Priest for healer - Warrior or Druid for tank.
Basically as was said above a competent Healer/ Tank duo can always find a group for an instance and are usually immediately welcomed to raid progression. Plus you can almost guarantee the success of a 5 man.
I've leveled as a mage in 2 person groups teamed with the following warlock, mage, priest, pali, hunter and druid. All were pretty workable but running with a healer can't be beat.

I have done two toons with a partner for leveling, the first team we did alot of grouping and we were a BE Pally and a Orc Warrior. I leveled prot and he did fury, so we rarely fought over drops. We did this from about 25-70.
While we did not team early the second time, we now group with a Drood and a Frost Mage. We started leveling these toons together off and on at about 40. We are now approaching 60. We can really knock the snot out of mobs. I stay kitty most of the time and and bear up when needed. He stands back and does massive DPS. It is quite quick. Due to quick killing, I move from mob to mob without needing to heal or about every 4th to 5th mob, by which time he has to mana anyway. This is a killer combo I would recommend. It would work well from low levels well and you will not need the same gear at all.
