My main is the first character i created and didn't delete :)
Not got a 70 yet (only played 4 months) but regardless, my 1st char is my main.

I don't have a main. I have 6 70s and working on my 7th. I will switch from week to week when I'm trying to get something in this case equipment.
So, Just take your time. Play each and get the feel of how to play them. Over time, you will find the one you like the most.

First thing you have to do is search the role you like more. DPS, Tank, Heal? If DPS, DPS ranged or melee? Magic or Physical?
Found it? Nice! Now it's time to play a little with each class in your selected list. Do low level instances, watch videos, read about the entire role of your class in PVE and/or PVP.
I played as a rogue for three years and was amazing. This year I started to play another class, Priest. And I found that healing is a lot more challenging than DPS'ing. I really
love
to heal 5-man and 10-man raids, 25-man I don't like much (aoe heals sucks!).
I'm thinking of play as a Tank someday, maybe when WOTLK comes.

I used to be an altaholic too, then I realised that if I levelled them all, having more than a couple of level 70s would be totally unmanageable for me. Some people may enjoy having dozens of level 70 characters but then each of those characters will not be as developed as they could be if that person only had a few chars. If you don't mind that and just enjoy to level chars then fair enough of course. Learning how to play all the classes may help someone to understand the game, but I bet I know how to play my two classes better than someone who also plays several others!
If you are fed up of too many alts it's up to you whether to delete them, you might regret it of course but I felt I had to delete mine just because they were sitting there neglected.
As for choosing, well who says you have to have just one main? I have a rogue who is my PvP main and first char I levelled. I also am levelling a balance druid who will probably become my raiding main. Rather than try to do both PvE and PvP with several characters, I just feel it is better use of my play time this way.
To help you decide which characters you enjoy playing more, write a list of your toons, then:
1. if you hate to be asked to heal, cross off the healer/hybrid classes that can heal.
2. if you hate to be asked to tank, cross off the classes that can tank.
3. if you get bored of kill skull, kill cross then cross off your PvE pure dps classes.
4. If you find PvP makes you cry, then cross off any classes that seem weak in PvP.
5. If you like to be able to re-spec and re-gear to do different roles, cross off any classes that can only do one role.
6. Log your characters on one by one and have a look at em. Do they have a walk, voice, combat sound effect or animation that gets on your nerves? Cross em off, these things sound minor but they will really bug you with a char you play all the time. E.g before you decide to go with pally healer make sure you either don't mind having the sound switched off, or have the mental fortitude to listen to the flash of light sound effect constantly for a few hours.
Whoever is left standing, he is your main.

Tamarin seems to have a good method in my opinion.
But, I am in a similar situation. I have 2 alliance 70s and one Horde 70 druid who has pretty much become my main. However my main problem is that my wife just started playing and now has a hunter. I started a warlock with her and got it to level 50 or so, but now I just play with her on the druid. Then my brother in law decided to play so now I'm leveling a shaman with him.
I hate when someone new starts playing and I feel like I have to start over.
I also don't like having lot's of "mains". I leveled my alliance pally to 70 first, then almost as soon as I got to 70 dropped him and leveled my rogue to 70. Then dropped that one, so I had 2 70s with horrible gear. Then I finally switched to horde with the druid and have been doing a lot of PVP with him, leveling all my professions up (even fishing is maxed out), has exalted reps with more than the other characters, better gear, etc. So now that I finally have a main, I keep having to start over to play with friends and family that keep wanting to start playing. Bah! :)

I like switching classes often. Pre BC I played a warlock, when BC came out, I leveled a paladin and it became my main, and now I have leveled a warrior and it has become my main. It is fun to switch things up and it keeps the game interesting. When WotLK comes out, I will probably switch classes again, just for a change.

I started as a rogue, then deleted him and made a lock. Then the lock was dirt poor when he hit 55, so I made a dk. Now I'm making a druid to level on my cousin's realm and I have a shammy and hunter...
Play as who you like best. That's always worked for me.
And if you can't decide, just play as who you want, doesn't matter if you get to high level content as long as you have fun.

Just roll a Druid. Druid can fit any role in a group/raid-setting. That way, whatever you feel like doing, you can.

Just play a druid, we can do basically anything ;)
(wow I answered before reading other posts. Guess I'm not alone in this opinion)

that is why i never have more than 2 character, cause i know it will be a pain in the ass where you have to level up all of them, gear all of them up, and that includes doing the same quest over and over and over and so on ( depends on how many alts u got )
i have 2 characters in total, that made me very easy to play without having to worry my other alts being leftover for long enough and no upgrades
but as for you, try to play each class you got, and whichever class that you play, you think its the most enjoying for you, take it as your main
that's all i can say, i know having alts are a pain in the ass, but yeah, that's the consequences
