nobody dual wields.
everyone melees.
Frost is crowd control/physical damage control. Blood is high melee damage output and vampiric-style healing. Unholy is DoTs and aoe.

all DK spells scale with attack power, not spell power. You will never need spell hit, spell crit, or spell damage/healing on your gear.

I've drawn up a few Dual Wielding Death Knight specs, but I wanna wait till the final tree is released before I save and use it as a reference. It was mostly frost and unholy, one or two talents in blood, and It was all about building up tons of runic power as fast as possible, and blasting away with deathcoils. I'm not in the beta so I can't confirm anything, but it looked solid to me.
That isnt going to work. Deathcoil costs 50 runic power now, dirge was nerfed from 75% extra RP generation to 50%, and runic power is based entirely on rune-abilities, not damage dealt or taken. Dual wielding generates no more runic power than using a 2hander.

I understand that Dual Wielding didn't increase the speed of my runic power build up, but it helped the talents that did and was generaly more beneficial to the spec. Dual weilding (Kind of) fast one handers will hit them more often, stacking the 10% more frost damage debuff, and crit more often, activating on-crit talents, ect.
But yeah, It probably wont work now. I haven't really looked over the new tree yet, I made this one when the WotLK trees were first released. Dual Wielding DK's seem iffy right now... I'm hoping they do something with it and at least make them somewhat viable.
DK tanks will be dual wielding.

In order to dual wield effectively as a tank, you need to do one very difficult thing - reach the expertise cap for parry on bosses.
Bosses are generaly considered to have 15% parry chance. That's 15% expertise you need... which is something like 500+ expertise rating at 80.
If you dont hit the expertise cap, then your faster attacks are going to cause the boss to parry, which leaves you flattened on the ground - whenever a boss parries your attack he gains 40% haste (same for players).
You'll also have hit issues, with the huge hit penalty on dual wielding. The only advantage whatsoever to using DW as a tank is that you can equip two tanking one-handers for extra defense/avoidance.
I'd still prefer a 2hander anyways, they typically have more stamina than you'll find on any two tanking 1handed weapons.
