What should I be looking at? Everyone usually just spouts "You must be geared from Tier 4 instances" but that's not really helpful at all. I want to see if my rotations/talents need improving before I go off the rocker on gear.
For Hydross, I've heard anywhere from 800 to 1500 from various people, and no word on what Void Reaver needs.

You should be in epics, epics are easy to get if your to lazy they won't bring you. 1500 dps for Hydross are you !@#$ting me? For most of T5 content you can get away with doing 700 dps that's what most of the raid will be pulling. Of course the non scrubs all do 1000+ dps because they know what they're doing. My Kara geared hunter does 1100 dps I take him to SSC and TK or w.e

If you are trying to progress through tk or ssc, Tidewalker is probably the best measure for dps. I would expect a minimum of 800 dps from hunters, rogues, enh shaman and any other single target dps and atleast 1200 from mages, locks and ele shaman or anything doing aoe.

lol@ these 1k + dps replies. 800 dps is fine in t5 content except perhaps on kael and vashj. 1k+ dps is fine in t6. If you can pull it in t5 then by all means do it, but like I said, 1k ish dps is average for entry t6.
However, and many people will probably attempt to argue this b/c they're retards, but dps **DOES NOT MATTER**, it's the damage you do overall that matters. If at the end of a boss fight you've done say 150k damage with 800dps, but someone else has done 1k dps but only 130k damage, you are "superior". Don't ask how that works out... I've out dpsed people that did more damage than I did.

A warlock would be high on damage but low on dps, since dots keep him active all the time whereas a class without dots will have "breaks" (ie times where they are considered not dpsing). Same damage over less time = more dps.
As for the OP, i'd say 800 should be a minimum, depending on where you stand with your equipment. I'm not talking about a minimum required by everyone to down bosses, but about what you should be able to do with you gear.
Raiding means optimizing things, because the shorter the fight the better for everyone. There will always be slackers who will do less dps and be pulled by the "involved" ones, there are bosses where dps doesn't matter as long as you know how to survive, ... but with end of T4/start of T5 gear you should be able to do at least 800 dps if you know your class and the fights

but dps
ON TRASH
**DOES NOT MATTER**
fix'd
dps on Bosses matters a whole hell of a lot... ever hit the Leo enrage timer because your dps is lacking? Point is you can have low dps overall and still top damage charts. This happens mostly because of aoe'ing trash and such. But in long boss fight... more than likely the person at the top of the damage meter is the person with the highest dps.

As feral druid i used to roll in at about 650 dps in Gruul and maggy and about 700 in SSC/TK. However nowadays with not a great deal of gear upgrades just better gemming/enchanting and being more vigilant with rotations i can quite easliy pop 850-900 dps where there is not a great deal of dangers to melee dpsers( eg i find Leo quite hard as melee due to his whirlwind and waiting for warlock to get aggro on him in demon phase.
