those are the 'old' descriptions of the trees. There is no single tanking or pvp or damage tree now, they're all kinda mixed.
A blood DK can tank, a Frost DK can tank, and an unholy DK can tank. They each can DPS as well, and all three are capable of pvping.
The difference ends up being -how- they do each task. My unholy DK has lower single-target damage than a blood DK, and about equivalent to a frost DK... but I have better aoe damage than either of them.
I've tanked through 5 mans (ramps/furnace) with no issues as unholy spec, and the build actually lets me aoe tank pretty well - almost on par with a protection paladin.
As for which tree pvp's "the best" - it all depends on how you play.
Blood plays pretty similar to an arms warrior without mortal strike (or a 2h fury warrior). It does a lot of single-target damage, both burst and sustained, and can rip someone up -very- quickly while keeping alive through self-heals.
Frost is slower to kill, but can control enemies much better. I think frost is going to be the primary build for most hardcore pvp DK's, due to all the snares and slows that help against being kited (currently, kiting is the DK's biggest weakness... someone can practically walk away from us and make most of our abilities useless). Frost also focuses a lot on critting and can put out some good burst damage due to that.
Unholy is slower as well, but has several advantages against casters (assuming you dont get kited) and has a lot of survivability - think SL/SL warlock. The issue with unholy is stacking up diseases (which requires staying in melee range) in order to put out some big obliterate crits for burst damage, or death strikes for self healing.
Unholy will probably be great for mass-pvp battlegrounds and world pvp, due to all the aoe at it's disposal. Unholy blight is shaping up to be a -very- good ability when surrounded by enemies, death and decay can be talented down to 15 second cooldown with unholy talents, and corpse explosion is, for lack of a better word, frikkin awesome now.

DK's can remove heal over time effects from their targets, regardless of spec. They can wipe a full stackc of lifebloom HoTs off of an enemy without the 'bloom' portion proccing.
Heavy frost DK's bring a few different snares and CC effects which will be very valuable to any arena team. Blood brings blood strike, which removes haste effects from the target (valuable for going up against mages or melee). Unholy will group well with other magic damage or DoT classes, mages / shadowpriests / warlocks primarily.
frost will probably end up being most popular for small arena teams (2's/3's) due to the high survivability and snares/freezes. It will work extremely well in conjunction with a frost mage due to class synergy when it comes to freeze effects. Blood will be ok in 2's/3's with a healer as backup, unholy will probably never fare well in 2's, but will do great in 5v5 where they have other classes to cover unholy's innate weaknesses.
