What I've found to be universally necessary as addons are as follows:
While leveling
1-Cartographer (map addon)
2-Quest Helper (cmon you kno what it does)
3-Titan Panel (useful, not needed)
High level dungeons (low level if you wish but this requires all members in part to have)
1-Omen (threat meter)
Recount and Damage Meters are both addons that measure the overall damage and are useful but not necessary for any role, more of a tool to compare ur current spells and abilities for damage.
For Healers
1-Healbot (yes needed)
For Paladins who raid
1-Power Pally (helps with buffs etc)
and there are tons more

As a general addon when you start the game the two most important are:
Autoprofitx - sells all vendor trash (grey items) in one click.
Auctioneer - If you want to make gold to buy that mount you WILL need this.

General addons: I don't think I could work without the combination of Cartographer, Lightheaded, and Doublewide. Quest Helper is a decent addon, but I don't use it. Bongos is nice as far as customizing action bars (and boy do I mean customizing). If you're a warlock, you may like Necrosis (if for nothing else, for automatic soul shard management), but not everyone is into the circular interface.
Healing addons: Healbot and/or Clique. Clique I would consider the 'lightweight' version - suitable for 5-mans while you're leveling - but Healbot is superior.
Edit: Omen. Get Omen. Omen has saved my ass many times.

Even if you use nothing but the basics, Auctioneer is a godsend. The "classic" version will actually make auctioning LESS work, not more, while greatly increasing your profits. Ever run into a wandering vendor who had 1 of a special item, and wondered how much you could get at auction if you snagged it? With Auctioneer, you'll know.
