For the most part on the Paladin forums avoidance and mitigation are the same thing.
In specific terms:
Avoidance
is completely avoiding the incoming attack. The accepted avoidance stats are Dodge and Parry (as well as Miss, which is an inherent based on the combat system).
Mitigation
is sloughing off some or all of the damage of an incoming attack that successfully hits you; Block falls into this category, as does (technically) armor as it reduces the amount of damage taken from a successful melee hit.
For practical purposes, Paladin tanks talk about
avoidance
being the total percentage chance of a tank to Dodge, Block, or Parry an attack (coupled with the base 5% for the attacker to miss the tank).
This is key when it comes to tanking raids: Mobs that are +3 or more levels than the tank have a chance to land a "crushing blow", or a strike that does 200% damage. However, by reaching a total of 102.4% of Dodge, Block, Parry, and that base 5% Miss chance combined, tanks effectively negate a boss's ability to land a crushing blow.

For one, uncritable means you cant receive a critical hit, which is different than a crushing blow (a tad confusing to think of at first but this guys right with the stats thus far) and yes thats with holy shield active.

No. Crushing blows and critical hits are not the same thing.
Basic overview of the combat table:
The effect of a melee attack is determined by a single roll. If we picture the range of options as a line running from left to right, the order of results would be:
Miss
Dodge
Parry
Block
Critical (2x damage)
Crushing (1.5x damage)
Hit
As we expand the numbers on the left end of the table, the numbers on the right hand side fall off the chart. So if we increase Block by 30% (by activating Holy Shield), then hit starts getting pushed off. If hit gets eliminated, then crushing blows start getting pushed off. If you expand Miss/Dodge/Parry/Block to 102.4% (which is the size of the table for raid bosses, who are treated as three levels higher than a player), then you can never take an unmitigated blow.
Critical hits are pushed off this way, obviously, but they are generally removed through the use of defense. 490 defense removes critical blows from the table entirely, which is important in situations where the tank cannot defend himself (stuns, fears, being attacked from behind) or when shield charges have been eliminated.
...and for the 102.4 % would that we including holy shield when its active?
