Against a level 73 the cap is 9% for single weapons and special attacks and 28% if you are dual wielding. Adjust those totals depending on which talents you took which improve your hit chance.

Get an addon called
Dr.Damage
it will tell you which attribute will give your more damage out of hit, crit, and AP.
Remember your crit is limited by your hit, so it's a good idea to have some. Most tier gear has +hit on it.
You should concentrate on AP and Crit before Hit. Don't gem for hit.
Also, instead of +strength gems, you may wanna get +AP gems, or +agi, due to the new AP formula that will arrive in Wrath of the Lich King
Which is:
1 strength = 1 AP
1 agi = 1 AP
1 int = 1 AP (if specced for it in the enhancement tree)

Well you can just get some feedback and using the feedback gather data for the most "resonable" hit %...
Personally I am doing around 800-1100 dps in raids, usually #1 on the damage meters on fights where you can wack all the time (Shade of Akama for example). I got ~12% hit and about gear you can find it on
Armory Light
. As said, there is no magic "you need # % hit" but you can balance your stats to make it work out just fine. :)
Also note that recently you got the expertise stats, so you need to think about it too. It does pay to focus some on expertise (the ring from MGT heroic is a great investment!)
