On my warlock, I switch to opening with Shadowburn, which is instacast and also instantly tags. I'll also rapidly tab target between mobs in range, cast a Shadowbolt, and continue tabbing until the bolt has hit the target. Unless they're very good, they'll won't be able to reliably predict which mob I was targeting when I started the cast.
On my paladin, I usually round up a huge pack of mobs and start Consecrating. If someone tags one of mine, I bubble, which causes
all
the mobs to go after them. It doesn't work so well against hunters, who can usually Feign, but it's often lethal to other classes.

Shadow Word: Pain for me. Be a more unpredictable is all I can say... or just go quest somewhere else.
Shadow Word Pain doesn't really work well. You don't tag the target until it does damage. So someone can do a instant damage cast and steal your target even with Shadow Word Pain on there first.
I am a mage and always ninja the priests that do that. :D

Use instant attacks to tag (wand or dd or whatever) with the lowest threat possible (getting a lvl 1 wand just for that might be worth it). That way the other one will always outthreat you with his first attack.
* If you tag it, and the other attacks it, it goes after him and you win
* If the other managed to tag it, you still don't have agro and can go to another mob while he fights that one.
Or you might fake attacks at a target to get him to fight them, and then switch.
