Some people arent as flexible as we, I personally dont give a hoot about lore while others claim without it all life ends. If you have a lore lover who is stubborn and has a short fuse, you have all of the elements of the person who wont keep quiet about the decision thats been made and wont be changed no matter what they say. So hey, do what I do, just smirk at their comments knowing that they need a storyline to feel safe and secure.

Yea, considering that playable Death Knights are of the unwilling variety any argument on the races culture can be refuted by the simple fact that no playable Death Knight willingly choose that path (some of the original Death Knights did, but that is irrelevant to playable ones). Even Draenei Death Knights are justified since there is a roughly 2-year period where a Dreanei could have journeyed to the Eastern Plaguelands, been killed, and subsequently raised as a Death Knight.
As for Gnome Death Knights. Some people dislike them because they look silly. I challenge anyone to find the slightest shred of lore evidence to prevent Gnome Death Knights from existing.

Trolls that get infected, for example, just become zombified versions of their former selves, instead of mindless slaves.

Actually Zombie Trolls are indeed mindless slaves. When they are infected with the plauge the process isn't instantaneous (as shown in
this quest
) they still wind up as mindless slaves of the Lich King.
If you notice, the bulk of the Lich King's undead forces consist of undead Humans, High Elves, and Nerubians. This is simply because the 3 kingdoms that suffered the most at the hands of the Lich King were a Human, High Elven, and Nerubian Kingdom (Lorderan, Quel'thalas, and Azjol'Nerub).

I don't think Gnomes are a controversy. Gnomes, while silly, are certainly corruptible--they are one of the only two Alliance races that can be Warlocks. Tauren are more difficult, as they SEEM to be some of the most good and pure in WoW. However, they can be corrupted too--Exhibit A: the Grimtotems. The most difficult would be Draenei, as they seem to be the most thoroughly good and pure race in the game. However, just look at two of the most evil characters in the lore: Kil'jaedan and Archimonde. While they weren't actually

, per se, they were uncorrupted Eredar once, which is basically what the Draenei are now. So they, too, can be turned to evil. With all the other races, it is no problem, for there is an example of an "evil" character in each: Arthas and Kel'Thuzad are human examples, Ner'zhul is an Orc, Zalazane is a troll, Illidan is a Night Elf, the Dark Iron Dwarves, the majority of the Forsaken, and Kael'thas for the Blood Elves.
It's irrelevant how corruptible the race is in life, since playable Death Knights have been resurrected as such by the Lich King. If you want proof I refer you to the Death Knight starting cinematic

. So what I'm saying is that there is no need to culturally justify all races since they were forced into service against their will (and subsequently break free).

It affects them differently. They aren't truly slaves, they can still hear his voice, but they don't HAVE to follow him, if they have strong enough will.
It's true that one Troll managed to retain his free will just long enough to leave a message requesting his own assassination. However it's possible that the plague simply hadn't fully done it's work.
