Your stats are a bit low for MH, you need to stack more stamina... a lot more stamina, you'll need to live through the pummeling when the abominations stun you and you're open to take hits from every mob.
Stacking BV, imo, is mythical. Yes, it does help, but not enough for it to be noticeable in most cases, esp since you only have ~ 22% block without HS... if you were making a block set that would be a different scenario...
I would think no less than 15k armor, 14k hp, 20% dodge, 15% parry, 10% miss for tanking trash
and for better results, probably 16.5k+ armor, 14.5k+ hp, 25%+ dodge, 15%+ parry and 10%+ miss... again, for trash
You don't have to worry about using libram of repentance when multi-tanking, or trash tanking in general, so feel free to experiment.

You have an abundace of defense. Replace some of those def/sta gems with pure stamina gems till you're at about 15k unbuffed. That should do the trick.
Ideally replacing gems, that puts him at ~14.5k, but yes, replace gems and some items.

But atm I only have the one kit so replacing lots of defense gems might put me back into uncrushability, which means i'll be unable to tank bosses to the best of my ability again.

I tested it out, you can reach up to 14.7k hp in your current gear without losing uncrushability (with Libram of Repentance) if you gem for stamina, you're doing fine.
In case you were wondering this chaarcter has gone from being a half-epic healer to a mostly blue-tank to this in about a month, this is the main reason for the lack of diversity in kits.
If you started off as a healer, you can use some of the heal set for a threat set, as for myself, the only difference between my sets currently are a couple gloves, cloaks and trinkets. Personally, I need to collect more as well :P
Is there any specific advice you could give me to get the most out of what I have access to, I do a full Karazhan clear every week, the Daily Heroic every single day, a Zul'Aman run that usually kills 2 avatars for chests and then the other 2 avatars and we're working on Hex Lord Malacrass. My guild is also doing Serpentshrine Caverns 5/6 and Tempest Keep: The Eye 3/4
that's a lot of potential gear you have access to, like I already said, try out warcrafter, I'll do you a favor and try to come up with a gear list when I get the time.
Also on a side-note the abundance of defense was because I spent a while looking in to it and found that defense gave me more overall on my way to uncrushability, please correct me if I was totally off the mark.
next to block rating, which is hard to stack, defense contributes most to uncrushability, however, you missed out on your glove socket bonus which would have been a greater bump to your goal.
Again any specific advice you could give me to optimise my gear is much welcomed, regards - Thrais

There's actually a ton of things you can buy with your badges...
Helm, wrist, gloves, belt, pants x2, boots, ring, and several other thing that you don't have to use right away but will come in handy for other sets...
