Death Knights are people who pledged there souls to the Lich King... Hence anyone can be a DK, no race is without there evil peoples.
actually, death knights are heroes who died in battle against the scourge, and were ressurected by the lich king under his control. We retain some measure of free will (or think we do, at least) in order to be better 'commanders' of his undead armies.
It specifically states in the intro when creating a deathknight that you were once a hero who died =P

Anyone who dies can be rezzed. What have they changed the game so tauren and dreani cant be rezzed now?
All races can be deathknights, even draenei and tauren.
Its not a matter of being ressed. Its a matter of how corruptable you are.
Actually corruption has little to nothing to do with it. All player death knights in WOTLK died while fighting the scourge, and arthas (or those serving arthas) ressurected them. The process of ressurection probably brought these death knights under the lich king's control/will, they had no say for or against whether or not they serve the lich king.

slain human paladins.
Knights, actually. The bodies they used were those of knights, who had no magical prowess whatsoever.

Once again, I shall utter the injunction that for Blizzard, the lore is utterly subservient to the gameplay.
