before expansion, engineering will profit you more than enchanting, after expansion, enchanting might be better. Enchanting will soon be able to auction their enchants and send them via mail etc and that will make enchanting much more viable as a profitable profession.
You have to also weigh the positives that each profession give you for being that profession. The bind-on-pickup items from engineering are the t5 level goggles at level 62 and 350 eng skill. You wont find better till high level raids and you get to have them at level 62, huge bonus yay, and then engineering has a mote extractor which you can take around and farm motes.
Enchanting, you get to enchant your rings (only enchanters can do so) with spellpower or 4 to all stats. Good to have, better stuff with expansion etc.
TBH, go engineering, get it upto 375, get a mote extractor and set of goggles, and then drop mining for enchanting and have both!

Except that both the mote extractor and the goggles require engineering to equip, do they not?
Engineering will make you lots of money (at high level only)
Enchanting can either cost you money out the ass or make you tons of money. disenchanting randomly dropped items and selling the dusts/essences/shards/etc can be a fantastic source of income. Just make sure the BoE items wouldn't sell better on the AH than the DE mats you'll be getting if you DE it.
