Tailoring is really good for a mage, as the end pieces that you can make are really good epics and will last you into T5.
Enchanting is a great profession, too. It is difficult to level and depends upon drops for you to get the best enchants, which is not completely true for tailoring, although there are some patterns that do require drops (Spellstrike, if I remember correctly, is one).
If you are in a guild that already has a decent alchemist (and if you are i a guild I am sure that there is a decent alchemist), then leveling that is not so good.
If you have or plan to have 2 70+ characters, I would do the following:
1) Get the one you won't play as much to 70, get it an epic flyer, and let it do herbing and mining.
2) Have your main (and I assume the mage) do tailoring and (something else). I would suggest JC or Inscriptions.
