Well, here's the breakdown, at least based on the consensus I've normally seen:
Druids
have excellent HoTs and help buff the heals cast on anyone in their party; however, their single-target heals currently require them to shift out of their "primary" healing forum, Tree of Life, and their one AoE heal is very mana-expensive and has a long cooldown. They also have the game's only battle resurrection spell (but until WotLK, it's also their
only
resurrection spell). They are argueably the best raid healers in the game because of their HoTs. Druids have good surviveability while soloing in PvE due to their hybrid nature.
Paladins
have argueably the strongest single-target heals in the game, and also (per opinion) the most mana-efficient single-target heal (Flash of Light spamming). However, they currently have no AoE heals and no HoTs, making raid healing a challenge. They can take more hits than the other healing classes since they are able to wear plate, so soloing isn't too much of a chore.
Priests
are the most balanced healers, with excellent single-target heals, good AoE heals, and a decent HoT. They also help with damage mitigation using Power Word: Shield, and each race has a special Priest-only racial ability that can be quite handy in certain instances. However, they may be the weakest when it comes to soloing.
Shamans
bring utility in the form of healing and mana-regen totems, as well as a decent (if costly) single-target heal, and a multi-target (non-AoE) heal. They offer shields that can help the target regain mana or health also. Since they're able to wear mail, they can typically take a few more hits than Druids (unless shifted into Bear form) and Priests, but less damage than Paladins.

You said you liked to tank and heal......well, sounds to me like you should roll a Pally or a Druid....and since there are like 9 million druids (at least on my server), roll a pally.

Come wrath, I think they are blending the healers a lot more. All classes are becoming less niche, and more general. It won't matter what class you roll.
Very true. While I haven't read about every healing class, I can offer these suggestions for Paladins:
With the combination of Inscription's Glyphs for Paladin spells, and the new Talents/spells that Paladins are receiving, Paladins are going to be much more versatile healers. They will be able to HoT (using either a Glyph on Flash of Light or by speccing into Sheath of Light in the Ret tree) or AoE heal (using either a Glyph on Holy Light or Beacon of Light at the bottom of the Holy Tree), or both (by combining the Glyphs and Talent specs in different combinations), all while still retaining their single-target healing prowess.
For example, a Paladin who drives to the bottom of the Holy tree and takes Beacon of Light will have a targeted AoE heal; he will also be able to Inscribe his Flash of Light so that it only does 50% of its initial healing on cast but then heals for 196% of that amount over the next 6-10 seconds, and if he really wants the Paladin can also use Glyph of Holy Light so that spell has a chance to heal 5 other raid members close to the target.
And then if the Paladin is also an Herbalist, he'll have a self-applied HoT that will heal up to 2000 damage over X seconds. ;) But that's neither here nor there.
