Is it possible for a group of rogues and druids to stealth run all the way through a heroic instance and just take out the end boss? If so, what instances work best?

i only remember ever doing a stealth run on heroic SP. but yes, its possible. you can even kill all the bosses and not just the end one. beware in some heroics, the boss's room needs to be fully cleared before pulling the boss or the adds will pull (2nd boss in slabs, to name one)

Stealthing past much of the instance should be possible but in many cases you won't be able to skip to the last boss. In most cases there's a door or some other barrier which requires you to kill at least one early boss to reach the final boss, depending on the instance that may require you to clear additional mobs to have enough room to safely fight the boss.
The caverns of time instances are based around events so there's nothing significant you can skip there and off hand I know Blood Furnace, Shadow Labyrinth, Mechanar, Arcatraz, and Shattered Halls all have doors you need to kill a boss to open. I'm probably forgetting a few as well. In the other instances you might be blocked by stealth-detecting mobs or just the position of mobs or bosses even if there aren't physical barriers to reaching the end boss.
You should be able to reduce the number of mobs you have to fight through careful use of stealth but I wouldn't count on being able to skip right to the end anywhere. Good luck if you try it though.
