I was thinking about trying an RP server for a more immersive playing experience. Are RP servers really any different from normal servers?

If you find the right one, yes, they are.
Sadly though most RP server's population consists of people who rolled there without knowing what RP meant or did and just didn't care. Those RP/RP-PvP servers aren't RP friendly at all. Take a careful look at where you roll your RP character, either by visiting their corresponding realm forum or the Roleplaying forum sticky on the WoW forums.
Through my experience. Twisting Nether, Moon Guard, and Steamwheedle Cartel are good US RP servers. If you really want to RP there are good RP addons like FlagRSP2 and MyRoleplay as well.

Not really. All global channels are considered Out of Character, and I've heard that RP is pretty much dead on RP severs, and that they even get ridiculous names like normal servers.
Yes, most of the time Global channels like Trade and LFG are OOC and for abvious reasons. It wouldn't make sense for it not to be, and only some servers 'died' as you put it as people leave and people who don't RP move in. Also, Blizzard doesn't really care about enforcing RP rules on the RP servers which contributes to this.
Second, rping only really happens at Goldshire (which makes it the rp central for the Alliance side).
This is what I mean by finding the right server. Most RP servers that spawned the saying 'Keep the RP in Goldshire' died and aren't very good. There are good and bad RP servers just like there are good and bad PvP and Normal servers.
So don't expect for everyone your run into to say "How goes the day milady?" cause most of the time they only talk to you to ask if you want to group for a quest (mostly).
The 3 servers I mentioned are very good to disprove this commment as I have walked up to people like this and had people walk up to me and begin RP spontaneously.

Moon Guard (which I play on) is more hit or miss lately. I think thats a symptom of population expansion. Eversong used to be -the- place to RP on the server, but now it's General chat is like a sequel to the Barrens. If you join an rp server to RP, find a good guild that is interested in this aspect as well.

Hey, I play on BWR too!
I have to disagree with you about what goes on in Goldshire though.... it would probably be more appropriate to call it ERP. There are a few people that try to RP and there are some RP guilds, but I think they tend to keep it to themselves.
