From what has been released so far, many of the inks used for Inscription will be made from Herbs. So that would be my choice; not only can you sell them to make boucoup money in the meantime, you can build up a stock so leveling Inscription will be easier.

As far as I know the "Accepted" (Like how it's accepted that blacksmithing goes with mining) proffession to pair with Inscription will be herbalism.
Of course, it's alweys viable to not go with the accepted, it's just a lot more expensive generaly.

Herbalism all the way. Pretty much all inscription items so far require herbs, trade goods made from herbs, or items bought from trade good vendors.
