It depends on the content that your friend is playing through.
If your friend attempted to tank Prince right now, there's a good chance that (unless your healers are just waaaaay overgeared) that he's going to reach phase 2 and get dropped like a sack of rotten potatoes.
If you are going to be tanking current raid content - Karazhan, Gruul's, and beyond - then for most of it you must be uncrushable. Prince Malchezaar, the first "tough" raid boss you face at 70, can (does? will?) get a lucky triple-crush which will eat anywhere from 15000 to 21000 damage in a few seconds - not enough time for your healers to react.
For raid main Paladin tanks, Stamina always comes after uncrittable and uncrushable.
Now, if your friend isn't main tanking for raids, and instead is just running heroics or regular instances, then stacking Stamina is okay because you aren't going to get crushed in heroics or while out generally tooling around. He still needs to maintain uncrittability for heroics however, so 485 is necessary.

If you do get crushed at a decent level, you're going to take 1-2k extra damage.
