Spriest is always welcomed and sought after by me and all the pallys I know... more mana is more threat... and you don't need crowd control with a pally tank, at least I've never needed CC outside of 1 time I asked for a sap...

This is the answer. Sorry you had to wait.
Mage = DPS + CC
Priest = Healing/buff OR (some) damage + utility.
Mages are needed in every raid. Mages are also useful in most groups while lvling, and in endgame. Warrior tanks always like to have a mage around.
Priests are great healers, healers are needed in every group or raid. However, raids and groups will pick whatever healer is better, so you will have to compete here too.
Shadow Priests are good support DPS. They have some utiltiy and return mana/health to their party. Most raids take one S-priest, and they are useful in groups, though they are support dps so a straight dps class may be chosen over them.
