Since almost everything in the current live version will be made obsolete for the most part, the only thing I'd really worry about is stockpiling some gold and maybe maxing out your professions.
However you shouldn't bust your ass to do these things as they both will be made much easier in the patch. You've kinda gotta weigh up the time/effort and advantages.
I think it'd be a good idea also to maybe stock up on health/mana pots and buff scrolls (intellect, agility, strength etc depending on your class) to make levelling easier.
If you're planning on picking up the new profession, I'd max out herbalism and stockpile any herbs you get (this is what I'm doing).
It'd also be worth selling any boe epics and other expensive trade goods now as their value will plummet in the expansion.
Other than that there isn't really a whole lot else.

I'm planning to level my second warrior (opposite faction) from 63 to 70 between September 27th (when my account is available for scrolling) and October 5th, grind it to SSO exalted by October 18th for the shield/gold to get epic flying, then run the Headless Horseman event till it ends for the mount, then use the last 2 weeks to drop herbalism/alchemy for mining/blacksmithing and max them out and finish getting gold for the epic training if I haven't yet. Goals are good. Although I guess that's a schedule as opposed to goals.

Good Idea!
- As far as I know marks are not going to be "inflated" in any way.
Saving up Honor?

- This will help too, though I'm pretty sure honor will be inflated (easier to get at 80)

You can only buy lvl70 gear from the arena points you gain now.
A different ladder and points beyond 70.

The most that I've done is to farm a large amount of herbs for a character to skill up inscription. Beyond that I don't do PvP reward items so not worried there. On a plus side. Any of the herbs that I've gathered to skill up on and that aren't used I can sell at a profit when I need cash. =>

Maxing a crafting profession seems expensive and unnecessary. WOTLK professions will give easy gains starting at 350 skill.
I don't think any Outland faction rep will be useful in Northrend.
Is it worth it to PVP you butt off to get the best gear? Probably not. But improving your gear does not sound worthless. Beta reports suggest that decent BC gear lasts pretty far into WOTLK. You won't be flushing all your gear at level 72.
Also, I you don't have a an epic flyer now, I wouldn't spend the gold just yet. You can't fly in Northrend until level 77, so the gold could serve you better in the meantime.
As for how to spend time, I've got a lvl 61 and a lvl 63 just sitting around. When the next patch comes out, I'm going to re-spec at least one of them to a 51 point talent, and just tear through the levels.

Don't forget to horde money because the cost for the new Grand Master professions is insane. For example to increase my Enchanting to 425, I had to pay 36g to get the cap increase and then an addition 7-8g per recipe. After the purchases, I had spent roughly 175g at level 70.

...farm herbs for inscription levelling
.. get mats for any yellow/orange skills to get your first 10 points or so in your professions
...spend any honor/arena points to get gear to help you level early on
...buy anything you can with BoJ and equip or sell in AH

I've just been doing stuff for the achievements every since they started coming out. Getting exalted with the home city factions, leveling up fishing/cooking/first aid, getting mini-pets, extra mounts, doing tons of quests I skipped, exploring the world, etc etc. Any gear and stuff you get now is going to be obsolete as soon as the expansion comes out, gold will be easier to get, etc. The achievements will be the same though.

any
gear you get will be obsolete when the expansion comes out. It's true that there will be gear better than what everyone has now in the next expansion, but according to the beta stats, tier 6 loot will last you until level 78 blues, which will likely need a group of 80s to get.
Also, the better your gear is before WotLK hits the more easily/faster you can get to the point where you replace items, which means you'll get to 80 faster as well.
Gold and such may be easier to get in the expansion, but that doesn't mean it's pointless to get gold now either. If you're going to be playing the game anyways, farming 250 gold by doing your 25 dailies in 3 hours (I'm being generous) is far more productive than sitting in Shattrath saying "Yeah, I'm just going to sit around and pick my nose because I can get 250 gold in an hour once the expansion comes out."

Since they are gooing to wipe horor, I am gooing to,
Max my trade skills and stock itimes for easy leveling of the first 5-10 points..
Stock gems so to socket my new gear with out having to return to a city. (same goes for encharnt mats)
Stoking mana/health inectors (cause they stack better)
and we have stocked about 40 rep bots
and ofcause i have stocked gold.
I stock gold because again it will help me get fastest to 80 as posseble if i dont miss any..
I Stock this way because We are gooing to level in a 5 manned pre set group that are gooing 70-80 instance only run.. so this way we will have to make mage protal for sw to buy new spells and get ported back by summoning stone.. this way we will be able to level fastest.
yes gold will be easyere farm at 80 but the daly quest from now to release will earn you about 6k and that should atleast last you a good way into trade skills, lvl 80 and rep costs,
I also found that in tbc the far easyest time to grain gold were at fresh lvl 70 i made about 20k gold from mats farming, blues and more in the fist month so get to lvl 80 fast and then you make a loats of gold...
