Is there a way to take the results of a search and export it, say to a .txt file? Also, is there a way to customize what fields I see displayed after I search?
I'm trying to use this functionality to speed up the process for some spreadsheet work that I am doing to create profession leveling information.

We don't have a method for exporting to .txt or .csv currently. You can, however, change what information is displayed in the table. Just use the filters to filter based on that information, and it will automatically add a column.
For example:
http://www.wowhead.com/?items
<-- All items
http://www.wowhead.com/?items&filter=cr=32;crs=1;crv=0
<-- DPS column added

This is something I have wanted too, though pretty much only for quests.
Being able to generate a list of all quests for a zone for example. Not too hard to copy and paste though.

I'm not quite sure what you mean. Can you rephrase?

There's a list... right in that page, in <select> control.

in your example:

filter=cr=32 is for DPS. Is there something that lists the different values of cr and what they represent? I know that I could find them all by trying them, but that would be quite time consuming.

This Greasemonkey script
will get you there. It'll add a box under all lists with the data in CSV format. If there are multiple lists, it'll give you a button to click for each to show the box.

I'm not sure it will do what you are looking for, but I use Google Forms to create a survey/quiz which each form generates separate results that can all be exported to a final spreadsheet.
This is a list that I'm a little behind in updating, but will give you a general I idea of the result after creating a link to share with others to view.
