You should level the same class he does, then at 38 switch to the warrior (because he'll have a mount by then and it'll take up one of the required spots in an average instance group when you get higher). Unless of course he is leveling a warrior or rogue, in which case you should level a healer.

I would certainly not pick an overpopulated (dps-)class unless he really likes this in a game. I am a Rogue, which has many times been a hinderance to me in PvE situations (which is what WoW is all about for what I care). If you roll a dps, and you're not really that good at it, the game will probably never be fun in high end situations.
I'd recommend Warrior as of now. Since I enjoy dps classes, Warriors can do great damage if you know how to play them. Both in PvE and PvP it's decent, in my opinion. If I want, I can respec to protection and get into just about any instance in less than 30 or 60 minutes.
I personally don't enjoy healing in a game, but if he wants to try that out, I'd recommend a Shaman or a Druid. I don't think Priests and Paladins are that fun when it comes to the hybrid side. Priests basically have to make a choice if they want to heal or dps, while Paladins are very gear dependant. Since quite a few of the Druids I know whine about their class, I guess a Shaman would be the most fun. Healing in most cases is quite simple. It only gets more interactive when you have to do more than
just
heal your usual 2-3 targets.
As for other DPS, I think Mages and Warlocks are simply boring. At least frost Mages when it comes to that class. PvE-wise it's too repetetive and (in my opinion) easy. Not near as interactive as a melee that has to move around and understand what happens around him. For PvP, I think Mages are more fun than Warlocks. I see Warlocks as rather easy to play in any area of the game.
However, it's hard to say with WotLK coming up.
There are two things I will never, ever make in this game. A dorf, and a Hunter.
