Skinning & herbalism are by far the 2 easiest skills to work up. I dropped mining (375) for herbalism to help out my alchemist & less then 2 days later, I had mastered it to 375! Of course this was with my lvl 70 dwarf hunter.
Depends on what you want to accomplish with your profession. Everyone ALWAYS needs mats...and a lot of people hate grinding for mats. Personally, it doesn't bother me. I'll grind for knothide leather for hours without thinking about it. I send those to my master LW friend, he makes the heavy stuff & sends it back to me. I sell that at a huge profit at the AH. Rinse....repeat.

Herbalism & Alchemy
Philosopher's Stone
A +5 to all stats at level 35 - Priceless.
Alchemist's Stone
- the big brother, +15 to all stats.
Assassin's Alchemist Stone
The most passive AP on a trinket plus the 40% bonus to mana pots is NICE while raiding.
Elixir of the Mongoose
big DPS boost for melee classes at lower levels.
Elixir of Major Agility
Never Raid without it.
Not to mention all the
Super Mana Potion
,
Super Healing Potion
, plus, my all time favorite,
Mad Alchemist's Potion
.
