Wow.... He isn't uncrittable. He shouldn't even be allowed to step into a raid without a Defense above 490. He is wearing Ret and Warrior gear...
I grouped with a priest one day for a heroic. He was a very poor healer, but I made up for it by over-gearing the instance. At the end of the instance I inspected this guy's gear and noticed a fair amount of Defense rating - and cloak and a few gems. I told the priest that he should focus on more valuable stats and avoid Defense rating. He promptly ignored me and left the group.
Sometimes people just want to play their own way, and that's fine - he is paying the subscription fees, it's his account, let him gear his tank the way he wants. Just don't take him raiding. You can choose what players you want to group with and if there is somebody in clear need of help, but refuses to accept any advise that comes his way then it's time to cut your losses and find a new player. If he is really interested, tell him to do the homework and get geared properly on his own before he will be accepted into another raid. To encourage him, perhaps you could invite another paladin tank into the guild to take his place until he gets a clue.

Here's what you do:
If you have guild forums, link to the tanking sticky at the top of this forum. Read it yourself and copy-and-paste a few of the pertinent points (such as the fact that Paladins generate threat through Holy damage, not through white damage; all tanks should be uncrittable (490 defense) before attempting to main tank any level 70 raid, and uncrushable (the sum of block, dodge, and parry when Holy Shield is active needs to be 102.4% or greater) before attempting back-half of Kara or later).
Bring it to the tank's attention and ask him to read it.
If he refuses to read it, talk to an officer or the raid leader to get them to "suggest" improvements to him.
If he still refuses to change, don't raid with him.
The last step is harsh but here's the thing: This is a game, and as such it has very concrete rules. Those rules (or the mechanics they rely upon) can be mathematically-complex but a lot of the work has already been done for you. Those rules establish a baseline for being successful in certain content. Attempting to do that content when you don't meet those baselines will lead to losing the game (i.e., multiple deaths, high repair bills, and frustration).
So while people can play the game however they want, and
should
do so to have fun, the fact remains that what they're doing does not ensure that they can perform well (or even adequately) in all aspects of the game.

2nd get rid of all attack power and replace it with stamina / spelldmg ( hard to find a good ballance but but :) )
get all ghetto gems for now since 3.0 will make spell damage weak.
