Is there any way to hide from being seen on friends lists?
No. WoW is not an instant messaging client.
You could just go offline if you don't want to be noticed.

That is why I am leveling a new toon when I hit 70 all I got was do you have any extra gold I need this or that or something.So now all of the people who asked for money have no idea who or were I am.Its great walk up and chat with them and they are clueless.

Actually - it doesn't take an IM client, and in fact WoW's chat system is sort of deficient compared to a lot of lesser MMOs.
For example, City of Heroes didn't do a lot of things right - but one of the things they
did
do right was the chat system:
CoH has a /hide feature that makes you appear offline on all Friends and Guild (Supergroup) lists.
It also had a feature called a global handle. You could add somoene's GH to your Friends list and it would tell you if they were online on any server at all, as well as what character they were playing -
and
they could whisper you using your GH even if you weren't signed in on the same server. Of course, they also allowed a /ghide feature, which, when enabled, made you completely invisible for all chat purposes.
WoW does a lot of things right. But they ain't the pinnacle of chat functionality; just because they're an MMO doesn't mean they shouldn't have a robust chat system with all the features of an instant messenger. In fact, I actually consider the lack of the above features a pretty big oversight given how well Blizz implements a lot of other things in WoW.

Warcraft is a social game as much as anything -- that's where the
multiplayer
part of MMORPG comes in. I've always thought that a "hide" feature was sort of silly, counterintuitive and anti-social, and goes entirely against the spirit of what an MMORPG was supposed to be.
Maybe I'm just an idealist, though...

If you want a WoW instant messenger, get Xfire. But what you should do is get a paid name change and if he whispers you asking who you are and why you're on his flist, lie.

This. Get a name change and tell him you quit the game. Or change servers and tell him you quit, although if he really dug into it and knew what kind of gear and stuff you had, he could find you on the armory, so you might need a name change too. Thats only if you are extra paranoid.
