My Warlock is my Herbalist/Alchemist for my account. I should pick up Tailoring on him, but I have no desire to do that again after doing it on my Mage. Frozen Shadowweave is incredible but I just don't have the energy for it again (I farmed everything myself).
That being said, I'd still say that if you haven't started yet, go Tailoring/Herbalism. Tailoring for obvious reasons, and Herbalism because it requires the least work out of the 3 main gathering professions. Sure skinning is just go out, kill a beast and skin it.. but after 70 it's not all that common to be fighting Beasts, you're more often fighting Humanoids or Elementals or Demons (at least from my experience). Mining has a bigger profit margin, given the sheer volumes of Adamantite Ore that Jewelcrafters go through, but comparatively I think I find more herbs than ore nodes, so it kinda balances out in the sense that you can farm more herbs in a greater volume faster than you can mine Ore, so even though a stack of 20 herbs may sell for less, you'll find/sell more. Not to mention Herbs are something that're *always* in demand.

My warlock got mining and jc. For the epic gems and for good money. But when WotLK comes I´ll reroll my mining and get Inscription. And btw Im for PvP.
