I'm not sure about hunters.. but paladins gains 1.9888 atackpower per strength-point
around 2AP per 1STR. I think AP's more effective for hunters tho. I'm not sure but hey this might've given you a little wink in the right direction.

It varies by character class too - for example, druids get 2 ap per strength point, and also 1 ap per agility when in catform only. Best to read the wowwiki pages ;)
Strength has uses for blocking with shields as well I think, it's very much a tanking stat.

As a hunter, you will get the following attack power bonuses from stats:
1 Strength = 1 Melee Attack Power
1 Agility = 1 Melee Attack Power, 1 Ranged Attack Power
1 Attack Power = 1 Melee Attack Power, 1 Ranged Attack Power
You don't want to bother with Strength, because it does not help your ranged damage. Agility and Attack Power are both good stats to look for on hunter gear.
