From my 2v2 experience.
Enh. shaman/boomkin, with skilled players, can be quite a pain in the butt to kill and do a ton of damage.
For melee, if you are trying to kite a pally, you are giving him his burst back. He WILL catch you eventually, and burst you for 8-10k. The only one that should kite would be a rogue to restealth.
Biggest warrior mistake is to kite a pally or throw on a shield. Charge, MS, hamstring, burst him. When his HoF drops(the spinny red circle below his feet), hamstring again and BF till you can execute him. This typically requires a healer, but it's the only way to beat a pally, or come close to beating a pally as a warrior. Do NOT throw a shield on unless he hasn't stunned you yet, or is about to stun you again. Spell reflect is the only use for your shield. Period.
Feral druids, if you don't have heals, you are more likely to kill a ret pally as a kitty than a bear. True story. Bears are easy to kill, kitties are not. Feral druid/holy pally is actually a good combo right now. Feral kitties do a lot of burst with the right gear. No bear against ret pally. I actually fought a blue geared feral druid, and he killed me a few times as a kitty, but didn't come close in bear form. Also, don't try to heal yourself unless you are completely out of LoS, and don't shift travel if you have the red hammer debuff on you. He will /rofl at you while biting your spots off.
Mages, do not blink around a ret pally unless he stunned you. Mages have a much harder time with us now, but you will not survive if you blink for position without cc on him. Period. I've been chewing mages up lately, but they all seem to keep making the same mistakes. Every once in a while I get rofl stomped by a good mage.
DK's, if your partner can stun, let them stun the pally and blow his HoF. Then when he runs, death coil and go for the dispel. If you get it, chain him to the spot and silence him if he's near 50%. DK silence doesn't allow bubble for a bit of time, and if they can kite out of it, they win.
HoF is the #1 pally spell. Purging/dispelling so you can get certain buffs when they pop is a major benefit, but very hard in practice. Typically, a good ret pally will be very hard to cc. 3 ways out of stun/snare, 1 way to save his life. If you have a priest, he should spam Mass dispel over the pally if he gets to 30% until he dies.
Those are the main mistakes I've seen so far. Oh, and hunters should always nuke a pally till he bubbles. BW, trinkets, everything. Disengage and feign. Get a big pet so it's harder to see thru to reselect you. Most hunters are chew toys for ret pallies.
