What you really need to keep in mind here is what BoP or crafter-only items you get for having a profession. Anything else (BoE gear, enchants, potions, etc) you can buy from people without having the profession yourself. So, you just have to decide what out of this list you'd most like to have.
Tailoring gets you the
Primal Mooncloth
or
Shadoweave
armor sets.
Enchanting gets you ring enchants,
+20 healing
or
+12 spellpower
.
Alchemy gets you the
Alchemist's Stone
.
Engineering gets you the
Powerheal 4000 Lens
or the
Destruction Holo-gogs
.
Jewelcrafting gets you
trinkets
and
epic gems
.
Blacksmithing gets you... nothing that would be useful for a priest. It's all mail or plate armor, and melee weapons.

Absolutely Tailor/Enchant.
1565 healing and 9k mana with 1 (one) Kara epic, and it's bracers, which is giving me maybe 10 healing over a blue.

Like 90% of the questions out there, there is no clear cut right/wrong answer but, I'm going to have to personally disagree here. Have an alt be your alchemist. These potions aren't BoP at all. An alt can make them for you and mail them to your healer.
I think tailoring is the one staple here. PMC is amazing to use as soon as you 70. I still feel enchanting is the best way to go as the secondary. It is invaluable to be able to enchant your own items, and trust me, you will enchant every single slot you can. No tips for other people, always have the materials you need (outside of primal life's, which you will need to spend or farm a ton of those). If anything, look at it this way. A priest who has enchanting will always have +40 more healing over a priest who can't enchant because you can only self enchant rings.
