Ok, I have a level 55 Paladin, and a level 61 Death Knight, after playing the DK, I fine that going back to my Pally is unplayable. It may be mount speed, or the fact that it takes 1 minute to kill a guy ( is Prot . I was thinking of rerolling.
I was thinking of making
a shaman
priest
druid or mage
And I was wondering, how do these classes do when leveling up/need in raids.
I love the idea of being a troll priest, kinda like the witch doctor.
but mages seem cool, but with shammys, I can play a bunch of rolls.
If anyone could give me a brief over view of specs/leveling and instancing with these classes, I would greatly appreciate it.

Prot paladins actually can level very nicely, once you figure out the rotation and gearing for leveling. As for movement speed for paladins.....crusader aura ftw (20% increase speed > 15% Increase speed)? But anyway, for your question on the other classes....
Shamans are nice if you like hybrid classes. Raid wise you won't find a whole lot of people looking specificallly for shamans, however, you wont find very many people turning you down just because you are a shaman. Leveling, shamans arn't the easiest, but they are fun.
Priest are hard to level, especially if you try leveling as holy. However, people love priests for raiding. You will be greatly sought after if you are healing, and its always nice to have a mana-battery dps in the group.
Mages are very fun, imo. You will die alot to start out, until you hit level 40ish. After that, it is smooth sailing for mages, especially frost. Raid wise, mages can crank out some nice dps (fire and frost are the easiest, but arcane is also great), and I always try to have a mage in every group I am ever in if im not playing my own, because I am to cheap to buy my own food lawl.
I havn't leveled a priest our shaman past 40, so im sure someone will have more info for you on them, but i have a 70 mage and 80 pally.

That's because your DK has epic riding skill while your paladin doesn't get epic riding skill until 60.

Update*
I have narrowed it down to a troll mage, or troll/undead shaman.
Pros of shamans
-I get to do pretty much any thing
- I like healing
but with mages I level faster, which are better at level 80?

Both have there benefits at 80.
With shamans you offer a lot fo raid utility that will greatly benefit your groups, which others will think about when deciding whether or not to take you on raids. Few have qualms about bringing in Shaman dps for this reason, and they do very decent dps. I personally don't enjoy healing as a shaman, but from my experience they do just fine in raids. Rolling a shaman will allow you the option of switching between dps and healing in raids by means of respeccing whenever you want, which having options sounds like something you would appreciate.
Mages are really fun. They do awsome dps at 80 and very very few people will refuse a mage into a group unless they are simply packed with mages already. They only problem is you have one choice as a mage. DPS. If you like to dps then you really dont have a problem. Also the ability to summon your own food and water, and to teleport and make portals is definitly FTW.
