Well, for what it's worth, when my paladin was holy, I used Grid + Clique for healing. Small, easy to use once it's configured, but full-featured enough that you can do pretty much what you want to with it.

Well for any heroics or raiding, you're going to want Omen and Deadly Boss Mods (or equivalents).
For spell casters I also recommend CooldownWatch and IceHUD.

is the premier DoT timer for Moonkin. Its primary purpose is to time the Eclipse cooldown.
HotCandy
is the best HoT timer I've found. This, or something like it, is mandatory for healing.

Since you asked,
IceHUD
is basically a replacement for the player unit frame. It repositions your bars and such to the center of the screen. There is nothing Druid-specific about it. A google image search for IceHUD will explain it well.

Outfitter
-- I'm feral, but I view this mod as must have for any druid. I don't really use it much on my other toons, but druids usually carry at LEAST two sets of gear on them. Outfitter allows you to set up 'suits' and then with one click you can be in Tanking gear, DPS gear, Boomkin gear, Tree gear, or equip your various Resilience gears when you PvP. I couldn't live without this.
Pawn
-- There's quite a few addons like this one, it assigns point values to stats and assists in figuring out "is this an upgrade?" You have to plug in your own values, and its not as sophisticated as say, RatingBuster, but its a lot more flexible. Another I couldn't live without.

X-Perl UnitFrames
-- This adds a lot of utility to the UnitFrames (self, target, party portraits) including Poison, Magic, Curse, etc notifiers, Range Indicators, Buff / Debuff timers, etc etc. It also has a nifty '3-D Animated Portrait' feature which is really what made me like it in the beginning. I can't live without it now that I'm used to its capabilities. You asked about an 'Easy to Buff' addon, I think the only buff you're ever going to be responsible for is Gift of the Wild, X-Perl will tell you if someone is missing it.

HUD mods in general(IceHUD, ArcHUD, MetaHUD, etc.) are nice if you're one of those people who either doesn't have their player/target frames moved over or simply doesn't watch them. It places your health and mana and targets health and mana(and pets if you want) in the middle of your screen around your character in a "circle". Some people really like them, I found that I wasn't overly partial to them. If you're having trouble noticing when you're taking damage, it might help you.
Although I use IceHUD, I'm in a similar boat. I ended up finding it a little cluttered on the screen. But instead of disabling it, I turned off all the options
except
for the GCD bar. This has now become one of my most relied upon parts of the UI.
